Some people in the comments saying use the dough hook to mix the dough…in my experience pasta dough is way too dry to be mixed effectively with a KitchenAid dough hook. The only machine I’ve tired that made the job easier (besides a pasta maker lol) is a food processor.

Curious if you store your eggs in the refrigerator. I assume you are using eggs from your own chickens, so they should be able to be stored on the counter since they’ve not been washed after collecting, no?
Great job guys! Tip re the pasta. Dust after cutting with flour and hang to dry over pasta machine, back of clean chair etc for at least 30 mins before cooking. Make sure the water has a rolling boil before adding. Oil is for fully dried pasta and not needed for fresh. I made kale ribbon pasta the other day but you can make all sorts like spinach, etc. Just make sure to drain the pre cooked greens first to get the water out or just don't add extra water to the flour, egg mix. One egg per one cup "00" flour... is your fingers as the mixer. You only need to dry if you are going to save for later and dry time 3 days. Salt goes in the billing water generously 😊

I just use my kitchenaid to mix the dough. Then use my attachment like you did, put a dollop of ricotta and mozzarella, fold over and crimp and cut. Best ravioli I ever had.
Just a little hint, get your water at a good rolling boil. Add a good amount of salt. When really boiling add your noodles. They'll cook in about 3 minutes. You guts did a great job.
TIP: Use the dough hooks for that kitchenaid. Dump it all in the mixing bowl and let that dough hook do the work. saves your hands and wrists and a big mess. I love to take a batch of home made noodles that have been boiled in veggie broth. When they are done, in another pan throw in a half a stick of butter and let it melt. Then sprinkle in 1/4 cup or more of dried bread crumbs. Throw in your noodles and stir. Those noodles will have that browned bread crumbs cling to them and you have a fine batch of pan fried noodles. I have never in my life made a batch that wasn't eaten all at the dinner table. No leftovers. They are that delicious I love mine with mashed potatoes and butter bread. A fantastic comfort food meal.

Little piece of advice from this italian to your kitchen, run your dough 1 layer through the cutter, not doubled up. It'll jam and overwork the machine.
Yes, excellent advice there. In the video, you could hear the machine being overworked as the thick and folded dough was trying to get through. Betcha' Daniel (fixer of all machines) heard it and won't do that again.
@PopEyed it's an easy fix, just takes more time to do the right way. Same with adding oil to your boiling water, that's a wives tale and a waste of oil. It doesn't do what people think and ultimately makes it harder for the sauce to stick to the pasta.

Hand mixing the eggs and flour is a time honored tradition, but I get the same results using a food processor. Homemade pasta is the best.

I crack my eggs into a bowl to 1 check for shell and 2 break the yokes and mix eggs then pour into flour hole

Keep your hands lightly floured to not get dough on them.
Double 00 flour, a touch of semolina and egg yolks...
