As a gajar halwa connoisseur and who has cooked it N number of time, let me share a tasty and easy recipe. 1. Grate the carrots. Don't throw away the juices. 2. Put it in pan and keep on stirring on low to medium flame. This steps is very important. We have to caramelise the carrots. This gives carrots natural sweetness. What you made is gajar ki kheer's halwa not gajar ka halwa(sorry, no offence🤭). 3. Once water is completely dried up then add full fat milk. I usually put 1/4 to 1/5 amount of milk. If you like to taste more milk then you can add more milk as well. Now keep on stirring otherwise it will burn on the bottom. This makes the khoya and add richness to halwa rather than putting khoya directly. 4. Once milk is completely dried up then add sugar. Since you did caramelisation of carrots and added not much milk you don't need much sugar as already natural sweetness was present. If the carrots are orange one then you need to add more sugar. Now, at this stage you need to add cardamom powder. It will stay and taste in halwa. If you add at early stages then it gets lost because of too much cooking. Keep on stirring till it dries up. Last add ghee and take off halwa from gas and add roasted dry fruits(you don't want soggy dry fruits that's why last.). Gajar halwa requires patience, time and energy. It's very well worth the effort put in. Hope this helps.😊

Also, agar aap pahle fat add kar doge to us se halwa banane ka time increase ho jaata hai because fat doesn't allow water to evaporate quickly...

Bhai. Gajar ko ghee mai sekate hai until it cook then add some worm milk then leave it until it dry then add dry fruits sugar and Elaichi powder. That's how made it, for final touches add some ghee on top .
This is quite right way to prepare gajar ka halwa. Adding milk is optional at the last. Should be roasted in ghee. Khova and dry fruits is must. BTW all the ways are good until it makes the dish tasty.
In my house gajar is roasted in ghee for five min and then add milk cook , add ilaichi + kesar( if available) kaju, badam, kismis, then after complete cooking add khoya at last and sugar again cook for five min. Add ghee again at end. It taste amazing. Anyway ur looks delicious too
