    Re: your jar cupboard... I have lazy susans in my cupboards. That way when I need something from the back, I just spin the lazy susan around and what was in the back is now in the front. 💖🌞🌵😷

    As an kitchen assistant, I may suggest to have a few cutting boards, { only a as a food safety tip & tricks 🤗 }
    1) green for fruit and veggies
    1) Red for meat
    1) blue for fish .
    A dollar general store may? have all of them. Hopefully I was helpful?

    When filling a pot with water to put on the stove, I fill the pot only to the point where I can still lift it comfortably. I transfer the pot to the stove and then I fill a quart jar with water and bring the jar to the stove to finish filling the pot.
    I've just spent a lot of energy chopping all that veg and the last thing I want to happen is dropping the pot and have tiny bits of veg all over my kitchen floor. 💖🌞🌵😷

    Every time I watch you cook, I realize we have to eat more veggies. We already go to store every 3 days for salad, so no problem. Re: Faucet - when we renovated the kitchen, the contractor included an auto "On/Off" faucet that you just wave your hand under it. Since Deb has limited hand function on right side, its wonderful, and also with messy hands when baking!!

      @@EmpoweredPara Just part of the package of lil changes we made to make life better and more convenient for Debbie (wife). Changing all the doorknobs from round knobs to levers, lights that turn on automatically by motion in rooms she uses a lot, railings on both sides of staircase, eliminating step down onto deck. If only we had remembered to tell the builder to eliminate the step down into the Family Room. Sometimes it just takes small changes to achieve great results! I’ll make a 10 second video one day, when and if I find my mini-tripod again lol!

    You are certainly strong and coordinated in lifting those pots over the pans on the stove! And a lot luckier than we have been with our countertops. We managed to badly scorch our laminate countertops and we eventually had to replace with Quartz. Our kudos to you on your cooking!

    That is a very well organized kitchen that seems to work really well for you. Kudos to you and your hubby for the changes you’ve made! I thought about this video when we were thinking about Summer Party planning and remembering that the top of our upper cabinets hold a lot of our party supplies. Because my wife can’t use a step stool, I usually ask her before I go out what she needs from the higher cabinets, and I get it down for her, as well as getting the mixer onto the island because it is too bulky for her one fully useable hand. She has now figured out how to use a really long-handled pair of tongs - similar to a reacher - to reach things like cookie sheets, pizza pans, muffin tins. It’s amazing how long it takes us to come up with solutions to these “issues”! Or how we get better with time!

    Awesome work Em!! I too use a nice pice of wood to transport hot pots. Since i only cook for myself i get to eat straight from the hot pot like a real human. What makes that safe is important. I have this six inch square silicone pad that can handle 500F. Even more cool is that if everything stays dry the pad acts like a non slip pad. I think u will love having any sort of kinda flat silicone pad. Ive had mine for yrs. Its a game changer.

    I’ve started using a cutting board also, after placing a 180c hot air fryer basket on my lap :( and then a couple of weeks later did the exact same thing… I’ve finally learnt by my mistakes and use a cutting board now 👍 new subscriber loving your videos - been in a manual chair for 3 years

      We just got an air fryer. They get so hot! Definitely keep a cutting board on your lap when you have hot things!

    Man you worked a long hard day in the kitchen, all the camera work on top of cooking, all you did was really cool. I like that you made your own bone broth to, I’m definitely going to try that myself.
    Thank you for sharing all your ideas, it’s really helpful. I stay out of the kitchen most of the time ( my wife does all the cooking) you showing how to drain a hot pot from your chair just gave me the confidence to try it myself. I guess I’m really kind of frightened of getting burned and just don’t try.

    We are currently cooking the bone broth in our Crock Pot. It should be ready in 12 hours. I see you ladled it into glass jars. We’ve always frozen soup etc in plastic containers but we don’t have any at present. We will freeze it in glass (Mason) jars. Thanks for your help!

    I use my island drawers also for my all my dishes. I feel that if you plan on being in the same home for at least 8-10 years it's so worth having your kitchen adapted with a sink that is lower (empty underneath for your legs), a cooktop at my level to see what I'm doing and wall unit oven. All this save's me so much energy and so much quicker for someone such as myself who enjoys cooking and baking. (But, that's just me :)

I know, been an inc quad for 33 yrs and have moved 3 times lol Any problems, contact the Rick Hansen Foundation for assistance as that's what they're there for. I was an ambassador for several years. By the way, when I saw you climbing the stairs at your in-laws, I was literally holding my breathe, worried a wood chip could nick your butt ! Have a nice day.

    Lots of good tips here! I do similar with the wooden cutting board. Which, incidentally, my husband also made my cutting board! Lol. My legs aren't always cooperative with staying still so it doesn't always work to do stuff on my lap. When it doesn't, I roll up/under the edge of one of our counters that has an overhang. I'm wondering how tall you are. I'm 5 feet so I was already short and now being in the wheelchair makes me even lower. I use pretty much all cast iron pans so while I can get them into the oven when needed, getting them out is a different story. Thankful for lots of helpers in my house.

      I'm 5'4" so I'm pretty short in my chair too. I'm the same with cast iron and big casserole dishes. Down is good, up is a no go.

    In re-watching this video for the 4th time, we noticed that you don’t slide the racks partway out of the oven when you are putting food in and out. Granted, some oven racks are rather tippy. Because of my wife’s lack of dexterity in her right arm and hand, we got a Samsung stove/oven that has one heavy-duty rack in the middle. It has its own built-in rack mechanism so that rack never flexes nor tilts. BIG improvement!

    Howdy. For many years, we made our own salad dressing in the same way you do. After both our moms passed away, we inherited their immersion blenders so now we have 3 of them lol! Then we worried about using raw eggs, so we stopped. We know you have a strong interest in nutrition, so can you give us thoughts on that? We would really like to go back to homemade salad dressing.

    Hi n I luv ur Shephard pie recipe with sweet potatoes. I also luv ur cutting board. Ur husband did a fab job with the wood. Would it help u to use a small metal cart on wheels with another cutting board on top for ur instant pot? Then u can movr it closer to plugs and would be at a better height n easier to see inside pot. Also on amazon I saw pour spouts that u easily attach to ur pots that seem safer 2 use made of silicone. fyi. thks roxanne

      thank you for all of those suggestions! Kinda brilliant to use a cart for the instant pot! not sure if I hsve enough room I'm my kitchen for that but I'm gonna think about how I csn make that work! Do you have a link for the pour spouts?

    I use a cutting board also and for added safety I’ll put a large potholder (mitten) up against my stomach next to the cutting board if that makes since. And if I think the object that’s on the cutting board should move I’ll put a pot holder on the cutting board then place the hot object on it so the dish/pot won’t move. You did awesome putting your large casserole in the oven. I consider myself really strong but I don’t think I’d be able to do that. So your tip dividing it into two smaller casseroles is a great tip. I’m a paraplegic T-4/5 complete and we/I just learn how to modify what works for us. Not always easy but we get by, huh👍? Your meal looked really good.

      Definitely takes trial and error to learn how to navigate in a wheelchair. Learned the hard way what doesn't work lol. I love the idea of putting a pot holder near your stomach in case thr hot thing gets close to it!

    If you are buying a stove, consider and induction cooktop, as long you don't wear magnetic jewelry, you greatly reduce your chances of getting burned. You can still burn yourself from the hot pan or the food but not the stove top.

    Debbie (current wife) and I were just at a local Farmers Market this afternoon and we saw this same style of cutting board that your husband made for you. They are thick, they are made of end cuts and they have the juice groove along the edges. They even look the same. They ranged in price from $90 to $156. Has your husband ever considered making his for sale for other chair users?

    Someone made me a reacher gadget, which is a metal floor seperater folded like a v, the ones you find at doorways, with the top of a deodorant top duct taped to either sides of the v, and I use that to turn burners on

    I just noticed that we both have the same marble rolling pin! I’m not in a chair, and I have tummy muscles, but I’ve always used this rolling pin exactly the same way! I just find that it means a better flatter dough. Well, other than the pizza I made this week (sigh).

      Best rolling pin around. I got mine because I needed to roll dough and keep it cold to help keep it flaky.

    You gave a lot of good tips cooking when you on the wheelchair. That a good ideal to have a stove next to the sink. I do not think I ever saw a home with a stove next to the sink. The counter you have look reliable dose not burn or show any kinds of burnt on the counter when you sliding from the pot from stove toc the sink. from your video dose not look like you have tile type of counter. my mom got a counter a real nice one that dose not burn even putting hot pot on the counter. My mom was on the wheelchair for a month due to her broken leg from boat accident when she was in Costa Rica. The boat turn over and pin my mom on her left leg. Lucky not on the upper legs. I spent two weeks at my mom's house cleaning, cooking and helping her with projects. I got to learn some of her good cooking recipes!!!. she than moved onto using a walker for a month and now she walking again

Flying back home from Costa Rica to San Francisco with a flight connection at LAX was not easy especially the staff member at the LAX airport was just nuts. They transfer my mom to another gate so fast that they push my mom on the cheelchair like a race car Argh!!!!!!!

    The stores in the states have WAY more chemicals in their food. Just wanted you to know...a 'shepherd's pie has lamb...a cottage pie has beef.

      @@EmpoweredPara I learned the shepherd pie/cottage pie thing a few years back. Since then I notice when people say they are making shepherds pie wrong 😂. It's like someone pointing out a 'blue car'...and suddenly you see them everywhere 🤣.

    Is there a recipe here for the homemade broth you made? My wife was complaining yesterday that the broth she buys to make her homemade beef and tomato soup is sooo salty and yucky.

      Just chicken bones or beef bones, onion, carrot, celery, salt, and water! Cook for 1.5 hours in a pressure cooker or 12 hours on the stove. Beef broth I spice with rosemary and chicken broth I spice with Herbes de Provence.

      My mom got it for me and I was like, "why do I need a new faucet". Now I hate when someone I visit doesn't have a detachable part of their faucet lol. How did I live most of my life without it!

      @morgancalvi6675 you can put a 2 prong thing into a 3 prong plug, but the instant pot is a 3 prong cord and thr extension cords I have are only 2 prong.

    I'm the dishwasher in my house...😅. I boil and soak the dishes...way better than a dishwasher. That temp only gets to 160˚. Thank you...the grocery stores are junk...MORESO in the states. Food companies have been closed down in the states. Brittney, the camera man thing was a hoot... 🥲. Did you run this by hubby though 😳? I mean will the camera man be filming his slow and tortuous demise 🤣???
    I use a boat motor mixer (I guess they are called immerser hand mixers, but boat motor mixer comes up...so boat motor mixer it is) because it saves on weak wrists and such.
    Record scratch: OK, HOLD the fort...meat (especially poultry) should never be cut on a wooden cutting board...it's a salmonella thing and you know Canada and it's meat listeria issues (please people never buy Maplewood Meats). THAT is a food hygiene thing because salmonella and listeriosis buggies are much better hiders in wood. I'm with search and rescue and have a life time certificate in food handling (not saying that to brag...but show I know just a wee bit about what I'm talking about).
    Tip for Brittney: Side by side refrigerator and freezer are a huge draw on the power bill. By the way, your handles being in and towards you are good ways to spill on you....good tip. I have that same exact boat motor! By the way, used eggshells in with the good ones=salmonella. I need to start making my own Mayo...but don't raw egg whites creep you out??? Oh what a great idea...mixing veggies up in the sink so you can see it. That looks YUMMY....I'm a Canuck...can I come over for dinner? Oh wait, I'm a vegetarian. Brit...pull the rack out and put the heavy casserole dish on the rack. If that oven was preheating...that would have been an ouchie...and I'd have to come visit you.
    Thank you Brittney for your inspiring me to make my own mayo. I'd be uncomfortable using raw egg whites...but LOVE the idea of using a yolk and the juice from chickpeas. I'm also getting drawers in lieu of empty cabinet space and not being able to use the cabinets. Do you have any tips on how to make a PVC shower chair? Again, thanks...and keep the videos coming!
