Here's a hack. Use Pam cooking spray on your hands so the cookie mixture doesn't stick to your hands. Also works great if you're molding Rice Krispy treats by hand so the marshmallow doesn't stick.

About the slime - you didn't cook it until it thickened. Cornstarch makes stuff thicker. Using all of that cornstarch to try to fix not thickening enough was never gonna work plus it tastes horrible. You should try it again but actually cook until it thickens.
