I personally found video more leaned towards Jiraya so, I would counter with some nice facts. (For True Naruto fans, I know it is long but, we have to consider these points)
We don't know how durable is Jiraya's mane, so if it can block amaterasu or not, I think it looks like an ordinary defence.
I have heard many you tubers saying, Itachi's Susano can not move and even it may be true but, in anime, while fighting with Orochinaru's eight snake jutsu, we can see Susano is moving.
Jiraya's sage mode would give him some uppper hand in summoning toads or in strength but as far as there is concern about totsuka blade, it is nor like normal blade which can be blocked, it is blade of flames means which can pierce almost all things.
And as concerned about Itachi telling Kisame that, we can't beat Jiraya, it can be considered as bluff also because Itachi was hidden protector of leaf, and I don't think he would lie to protect naruto from giving in Akatsuki hand by all indirect means, as even if itachi can't fight much longer battle but as Kisame partner, Kisame has charkra as equal as a tailed beast and he had some best water jutsu and Samehada also. Same as he stopped Kisame from fighting Kakashi after chunin exam. It was a pure bluff.
On Pain 's point, see every ninja has their own weakness and even to tailed beasts also.
So obviously if anyone knows other's weakness then it would be more easy to defeat.
Itachi can use Genjutsu even if opponent sees his fingers and it is hidden fact, not all shinobis know this that's why Jiraya did not advice Naurto, not to look his fingers while fighting Itachi so after putting in Genjitsu Itachi can easily use Tsukuyomi on Jiraya.
Even if final trump card against Jiraya would be Izanami, as he used against Kabuto in sage mode becausw he was not able to use tsukuyomi.
As far as sound genjitsu of ma and pa, it takes a lot of time to prepare. Would Itachi be like stand still and let them complete their song?😂
Last but not least, it would not be fair to fight one healthy and one illed.
