I also found one: when you select anakin as a character, there's a small chance that he'll say, "I'm here to help not just the men, but the women and the children too". It's really funny how this game makes fun of the prequels and embraces the memes lol
A protocol droid on Tattooine makes a similar reference. I think my favorite joke in the game has to be Anakin complaining about sand when Rey is finding the lightsaber on Takodana.

When you reassemble the chairs in Phantom Menace, they dance to the Cantina Theme. A nice homage to the same thing in The Complete Saga
You mean Lego Star Wars 1. Complete Saga was a compilation of Lego Star Wars 1 and 2.
One of the Easter eggs I’ve discovered was one of the more creepier and disturbing ones. There is a side mission called Ghost Protocol which is a protocol droid like C-3PO named Nobot. Nobot is located in the upper parts of Mos Esper in which inside the home you’ll enter you, can see it standing there, creepily before running off into a vent area where you’ll eventually get the brick. While that’s not creepy by itself, the lore behind Nobot is terrifying (Disclaimer: if you read this far and you do not want to read disturbing lore such as this if you are young, I’d advise to not read any further). Nobot is a protocol droid that mysteriously disappeared from station and wanders the sands of Tatooine until it was later picked up and placed in a household. Upon that notice after the arrival, it witnessed a murder of a pregnant woman of which some say the protocol droid did the doing. What’s more creepy is if you return back to the area where you collect the brick, the droid will be gone.
I thought it was a reference to Weeping Angels from Dr. Who.
Nobot also replays the screams from the scene too
I know of two more easter eggs.
1) It was shown but not mentioned in this video that when Kenobi drops the spare parts in episode 2, R4-P17’s droid body fell out along with the brick separator tool. R4’s body falling out is a reference to how some lego sets of this ship irl required you take the atromec’s head off and place it on the ship to resemble the way in looked in the films.
2) There is another similar easter egg to Lego Star Wars II copies in episode 4, on Naboo on the land where you meet Jar Jar Binks in episode 1, if you go up to the water and turn left. Following the shoreline, you come across copies of Lego Star Wars (I) at the edge of the map.
i love the little wiggle anakin does when it finally stays blue
In the Ewok Village one of the missions is to reassemble a picture of some kids that landed on the planet years earlier. I'm pretty sure this is a reference to the Ewok Adventure.

Max rebo is also In the first level of a new hope.
There's an awesome reference to Lord of the Rings where the character on top of the Tantive 4 Beaumont Kin who had the same actor as Pippin and he says Leia hasn't approved their second breakfast and you have to turn on the engines to help him cook it

There's a Order 67 Jokes in this game. The joke is based on Robot Chicken Where's Palpatine called Ewok for Order 67,where the Ewok dancing.

I find it funny how LEGO refused to make a new Phase 1 Cody, even in the game! Also the Anakin’s idol isn’t limited to Episode 2 Ani, its also on his Episode 3 & Sith versions
There’s one where one of the stormtroopers hits their dead on the door was added in the game too
If you free-play using a pair of characters who had major interactions in the movies, their spawning dialogue will often reflect that. For example, General Grievous always comments on lightsabers if he spawns with a lightsaber wielder (and also comments on unique ones like those of Darth Maul or Kylo Ren), a pair of battle droids cheerfully acknowledges each other, and young Anakin and Vader briefly talk about the suit.
My first encounter with those lightning pieces Palpatine has was through the Constraction figure of The Joker, as it was his wacky tie.
6:17-7:18 Anakin's Episode III variants also have the same idle animation, not just his Episode II variants.
Also, you forgot to mention that Order 67 is a reference to "Robot Chicken: Star Wars Episode III".

There's also Lando Calrissian's secret life as a cape collector, since in Cloud City during Vader's bossfight, one of the rooms when you try to find Vader has a LOTTA capes. And a picture of Lando wearing one. Pair both Vader & Lando & the former will ask for one of the latter's capes, which Lando is VEHEMENTLY against.
An obscure Easter egg is on Exegol. On of the Sith mentions he'd make a rhombus shaped super weapon with "devestating power." This is a reference to the World Devestators from the Legends continuity.
Not as good as the easter egg in LEGO Force Awakens where you can find a secret room on Kylo’s ship where minifigs of Kathleen Kennedy and JJ Abrams are filming a movie 😂

If you play with Anakin (kid) and Darth Vader together Anakin says "Cool suit! Where can I get one of those?" to what Vader responses "just wait"
If you travel to Exegol and read the signs hidden around the map they have different jokes and references on them
My favorite being a DMX Easter Egg talking about “Plan Exegol Gon’ Give It To Ya”
3:35 stealing a call, I found that Easter egg when I first played the game 😂
I found one: in the room where you have to build a Darth Vader to trick the stormtroopers in A New Hope, you can see an old lego stormtrooper helmet on one of the benches. You can tell it's different than the other ones

You can play as Carbonite Han Solo in this Game which is a Reference to extra toggle in the original Game

Another cool Easter egg that is a call back to the first Lego Star Wars is when u invade one of the battle ships the 2nd to last boss which is a stormtrooper is called TT2005 which is kinda cool and a nice nod to the original game

When you play as Leia and equip a stormtrooper helmet her voice will sound similar to Cortana’s from halo 2. Maybe it’s just me, probably a coincidence, but I thought it was worth mentioning as it could be intentional.
Pretty sure it's just using the same voice filter. Leia and Cortana have different voice actors, so I doubt it was intentional.

I found a secret in the loading screen showing starships. At one moment it would show a ship called the ghost. That is a reference to the ship named the ghost in Star Wars rebels.
It's an actual ship that you can fly in the game too.
