  • Welcome back Wowz Family!
    We're back at it again family! Cornishhens or cornish game hens are an excellent option for fancy dinner , thanksgiving or just for fun.. So let's get started!
    INGREDIENTS:
    1tbsp of Parsley flakes
    1tbsp garlic powder
    1tbsp paprika
    1tbsp black pepper
    1tbsp lemon pepper
    1tbsp chicken bouillon powder
    2 tbsp of lemon juice
    2tbsp of my homemade green seasoning paste which consist of fresh herbs such as parsley, thyme, scallions, bell pepper(color of your choice), shallots, olive oil..
    To make your seasoning paste blend all of the fresh herbs I mentioned with your olive oil then mix it all in with the seasoning powders mentioned above including the lemon juice to marinate your poultry.. set your oven to 375 for 35-45 mins, cover with an aluminum so your bird(s) can cook evenly and thoroughly.
    Once your bird(s) is fork tender , uncover and let it brown to your desired liking.
    Feel free to add in the veggies of your choice while it's "browning"...

    Ingredients for green seasoning paste( épis)
    *Olive oil
    *2 bunches of parsley
    *3-4 scallions or green onions
    *Assorted bell peppers( I prefer mine on the greener side, so I use green, red and yellow)
    *fresh thyme
    *6-7 black cloves
    *4-6 shallots
    *feel free to add habenero peppers (optional)
    *3-4 bouillon cubes
    PLEASE BE SURE TO WASH YOUR HERBS UNDER RUNNING WATER TO GET RID OF DIRT AND DEBRIS!

    Omg you cleaning your chicken wearing gloves and then you bleached your sink!!! Maybe I’m not crazy anything that has to do with raw meat I bleach it like IMMEDIATELY

      You're not crazy lol... yes to cleaning your meats !!! Gloves are a must for me, my biggest pet peeve is seeing someone rubbing their food with bare hands, specially the ones with long nails and rings on their fingers.. you're getting me started lol.. bleach is essential in my life , I can't do without it..       I bleach Everything after preparing any protein. However, I use clean hands instead of gloves for my household. Gloves for everyone else!!!

      @John Marston I'm sorry, I have tried it once, and I didn't enjoy it , I was grossed out the entire time, I'm aware that most restaurants do not wash their meat and that's ok, it's a matter of preference but as for me I'll stick with what I know and what I was taught...       Yes to gloves, yes to cleaning with bleach, but washing your chicken that way just contaminates more of your kitchen. A rinse and a rub to get dirt, or bone fragments off is all you need.

      Bleaching still doesn't account for the salmonella that you spread through the air with water vapors. Which is in fact more dangerous to your health than worrying about your sink. 😂😂😂. So you just ignore what all health inspectors say about washing chicken? Because you know better than scientists that have studied and have degrees? Plus there is no way you would be able to tell after you cooked if it was washed or not. I could put 5 out and say nothing and have you guess and you would not be able to tell. If you feel like you have to wash it at least put water in a kettle and dunk and dry or brine the thing. Regardless you would not be able to tell period. Doing this sink thing is just spreading bad kitchen etiquette and can get people sickly. 🤢

    Keep in mind nothing on the surface of the meat is going to survive 45-1 hour in 350 degrees… if it does it will survive your scrub down

      Covered for the first 30 minutes to trap in the moisture and allow the bird to tend its natural juices,then uncovered 15 minutes prior to removing from the oven .. and don’t forget to bast it from time to time

      Haitian épice (épis) is the perfect blend of fresh natural herbs, garlic, olive oil, assorted sweet bell peppers,cloves, shallots, bouillon cubes it's used as base in our cooking , haitian cuisine is influenced by several culinary styles namely French, Hispanic, African, and Arab influence.. it's very rare to spot them in stores, it's mainly made at home, hope I answered your question..

    2 and half minutes of this video is washing the Cornish. A very unnecessary step.
    And this a fact ...."Washing raw chicken before cooking it can increase your risk of food poisoning from campylobacter bacteria"

    I looked through the comments first in case you already answered. (BTW some of those comments need to salt lime and vinegar soak.) At the end you commented that you usually stuff the inside with the veggies and tots. Also you let the meat sit over night, do you stuff after you marinade the meat? Going to try this for Christmas thanks 😊

    I just subscribed because this looks amazing, I’m AA but I made jerk chicken for for my husband this weekend and has some epis left so I used it on my Cornish hens just like you did and finally I Like how you took the time to respond to some questions and give actual information unlike most youtubers.

      If covered (30-45mins) the moisture and juice rendered will speed up the cooking process and not let it dry out but if uncovered cook for for 1 hr, basting from time to time... Thank you for stopping by!

      @@WOWMelissa It turned out PERFECT!!! I omitted the bell peppers but made a corn starch slurry and had the potatoes and carrots. My 12 yr old daughter who is very picky, ate almost her whole cornish hen! I made White rice to lay under the gravy. Thank you again for your immediate help withh this!     I have been told that washing meat and chicken that will be cooked is useless. It contaminates your sink, hands, etc. Meanwhile, cooking kills germs, so this is a wasted step, but I know your answer will be to "Bug off and let me do what I want!" Recipe good otherwise!

    Is there oil used at all? Do you base chicken? Is butter or water used at bottom so pan/chicken won't dry during cooking process? Please more detail

      No extra oil is needed because it has already been incorporated in my green seasoning.. I was out of butter so feel free to use, also no water was added. I simply covered my birds to trap in the moisture while allowing them to render and cook in its own juice for the first 60 minutes or so, finish it off uncovered, basting from time to time..       Parsley
      Scallions
      Bell peppers of your choice( I prefer mine on the greener side)
      Shallots
      Garlic
      Thyme
      Scotch bonnet pepper ( if you're into spicy)
      Bouillon cubes
      Cloves
      Olive oil
      wash them before adding to your blender, then pour into a jar and store in the fridge.

    It looked so good. I never used salt in bath, what does the salt do for the meat? I typically use lime or lemons with vinegar.

      Limes, lemons and vinegar are great as well. But in most haitian household we add salt.. it’s a way of removing any impurities like germs, blood, slime, and excess fat before cooking while it gets rid of strong odors that may be present .. We let the salt and citric acid do its work for about 30 minutes, you will notice that after some time, the water becomes very cloudy as it removes all the impurities from the meat.

      Oh no! Did you cover it ? The point is to trap the steam and allow the hen to render and cook in its own juice for the first 60 minutes then finish it off uncovered for another 20-30 minutes depending on the size of the bird... Remember the larger your bird the more time you'll need to bake it... Hope this helps...

    How much of each ingredient/spices??

      1tbsp of Parsley flakes
      1tbsp garlic powder
      1tbsp paprika
      1tbsp black pepper
      1tbsp lemon pepper
      1tbsp chicken bouillon powder
      2 tbsp of lemon juice
      2tbsp of my homemade green seasoning paste which consist of fresh herbs such as parsley, thyme, scallions, bell pepper(color of your choice), shallots, olive oil..
      To make your seasoning paste blend all of the fresh herbs I mentioned with your olive oil then mix it all in with the seasoning powders mentioned above including the lemon juice to marinate your poultry.. set your oven to 375, cover with an aluminum so your bird(s) can cook evenly and thoroughly.

    It's traditional to wash meat, however, it's also unnessary if you cook to 165 degrees internal temp.

      actually washing meat hash been proven to do more harm than good. I seriously doubt the probability's of getting sick differ very much though

      It differs enough that the health agencies of several nations put out statements on it. The real hazard is not washing the meat itself- its EVERYTHING else the raw meat juice now touches. Like high up on the sink, her hands, the spigot handle, etc. etc.. each time you make it more complicated, the more likely you are to make a mistake and leave health hazards about.

    Sit for "an hour or two"!? My hubby finds it fine when it cooks for 45 & sits for 10.

      A matter of preference in a Haitian household( on normal days we let our meat marinate overnight ready for the next day) some may find an hour or two too long but 45 minutes will do the trick! Thank you for stopping by!

      Your ignorance is high.. the rest of the world clean their chicken with lime and vinegar etc except certain people who always get salmonella poisoning ☠️ ...Most people “clean” it because they want all that slime off of it before it’s seasoned. Like why is this controversial???
