A lot of the issues you are having performance wise is from the motor not being set up correctly. Ditch the 3 blade prop and get a 2 blade 6in. Secondly the prop should be half way out of the water. Its a surface drive not a outboard.

Can’t you use your mud motor 3/4s of the way and then swap to trolling motor in terms of being quiet?

You could but that’s just something else to load into an already crowded kayak
