Sugar-Free Vanilla Ice Cream Recipe

- My sugar-free vanilla ice cream is a decadent dessert that deserves one's full attention while enjoying it. It's not something you come by at your regular ice cream shop. So, it's best if you make it yourself I use a Grandiosa Grand Cru vanilla pod from Madagascar, weighing a little over 11 g! That's the weight of 2 to 3 regular vanilla pods.

Ingredients
4 yolks
20 ml agave syrup
1 Grandiosa Grand Cru vanilla pod or 2-3 regular ones
120 g xylitol
300 ml milk
400 ml whipping cream
30 g butter
Directions
1. Scrape out the seeds from the vanilla pod and add them to the yolks and agave syrup.
2. Add the xylitol and mix until the yolks lighten in color.
3. Add the milk and mix very well, then add the whipping cream and mix until homogenous.
4. Cook the mixture like an anglaise until it reaches 82C (180F). Make sure you stir at all times.
5. Pour the vanilla custard through a strainer, directly over the butter. Stir gently until the butter melts.
6. Cover with plastic on the surface and let it cool down to room temperature. Then refrigerate it for 8 hours or longer.
7. Stir the vanilla cream very well before pouring it into your ice cream machine. Churn it according to the manufacturer's instructions. While this happens, freeze a casserole.
8. Put the sugar-free vanilla ice cream into the frozen casserole and freeze it for 8 hours.
9. Before serving it, let it sit at room temperature for 5 to 10 minutes to soften a little. Enjoy!

Looks great! Going to replace the cream and eggs with frozen bananas as I have a family history of Cancer so need to avoid the estrogen and BLV in dairy and the lead and choline in eggs. Thanks for sharing

is not set overnight that is ice cream eight hours is half set that is why is scoopable
Because it's a custard, it needs time to rest in the fridge before you churn it. It's not mandatory but it makes for a better taste and texture.
