    Smuggler's Cove cocktail book lists 9 rums in their "Black Blended" list.
    Coruba, Gosling's Black Seal, Hamilton 86, Kohala Bay, Lemon Hart 80, Pampero Anniersario, Newfoundland screech, blackwell's Black GOld, Skipper Finest Old Demerara.
    I have Couba, Gosling's and Hamilton 86 in my bar.
    I generally lean to Gosling's or Hamilton 86, with Coruba if I want a sweeter "Black Blended" rum.

    I like a jungle bird with a 1/2oz of peach puree or peach syrup. The sweet fruity peach flavor somehow works so well with the unique orange bitterness of Campari.

    Bravo! Steve, absolutely amazing work here. You have taken an iconic Tiki cocktail and showed us how to make each of its components sing. Our taste buds are better for it. I found the evaluation of rum types really interesting. Rum is rum, right? Wrong ... and you demonstrated the point. There are plenty of "how to make a Jungle Bird" videos on UA-cam ... but very, very few show us how to make each component work well together and how a few small spec riffs take the cocktail in new directions.
    Unique take on the Jungle Bird "how-to video". Once again, bravo Steve!

    The mention of rhubarb reminded me of a little cocktail hack I devised recently when I was messing around with the Negroni, which is to dial back the Campari a little and add some Giffard Rhubarbe liqueur. It adds a bit of tartness and punch that works surprisingly well at balancing that bitter kick of the Campari while not muting it entirely. I was thus inspired to make a Jungle Bird variant tonight using Martin Cate's specs but with 1/2 oz Campari instead of 3/4, and then 1/2 oz Giffard Rhubarbe added on... and it was pretty good! You still have that bitter edge in the flavor mix but it no longer dominates the cocktail, and the tartness of the rhubarb complements the pineapple and lime as well. Not a bad option for people who just don't enjoy Campari, IMO.

      @StevetheBarmanUK Рік тому +1

      Yeah. Great twist. 100% endorse this message. Also the Giffard Grapefruit too. Pamplemouse I think it is!! Or for anyone else reading. If you don’t want to buy Liqueurs. Swap out the Demerara Sugar for a Rhubarb Syrup or a Grapefruit Syrup.

    I tried a couple variations on your Jungle Bird last night. I didn't have the exact ingredients.
    Both had 2 parts Pineapple juice, 1 part Campari, 1/2 Lime juice, 1/2 Turbinado sugar syrup.
    I did one cocktail with 1 Pusser's Gunpowder Proof & 1 Appleton Estate 12. The other was 1 Pusser's Gunpowder Proof & 1 Plantation OFTD. They tasted remarkably similar and both were delicious. They were surprisingly refreshing and not overly sweet with that slight bitter citrus finish of the Campari. We'll be making more of those for sure.

      Cheers Karen. Yeah, I did like the Orange variant. but the Pineapple still romped it side by side. Just the balance of the drink... the acidity of the Pineapple just more suited for me. Great experiments though. Trying to narrow down the next "experiment".

    Great timing on this one Steve. I've never been a fan of the Jungle Bird. The Campari is too bitter for my palate. I just made one over the weekend and even when I dialed the Campari down to a half ounce, the bitterness was too much. I like the Aperol idea as well as switching the juice. Many thanks! Cheers!

      15 ml Banana Liqueur
