as a Mexican American, I see the similarity to Mexican rice here....we use every exact same spice you put into yours except the curry and thyme. It's amazing to see how similar these dishes are... nearly identical. We pan-fry (like vermicelli) the dry rice before we ad it to the pot, but other than that I bet it tastes the same.
U should boil the pepper and tomato mixture a bit it will help evaporate some water, making it easier to fry later (since water and oil don’t mix well)

Hello, friend! I know I'm late to this, but I saw that you hadn't received an answer. Anyways, the traditional protein for jollof is goat meat 😊. Sometimes, we eat the rice with beef, fish, or chicken, like this man did. Honestly, it's dependant on your preference. Hope this helps✌🏿😊

Yeah, i used to like the google pixel UI and even Xiaomi UI aswell, i just feel that the pixel UI still has a lot to do. Maybe its because I've spent time with One UI more but it just feels more rich compared to most other UI's.

You could use mild Turkish red pepper paste instead of chilli? Or basic capsicum?
It will still be authentic, people vary in how much dove they can take, just use bell peppers, tomatoes and tomato purée as shown.

If you want to get it right, you need to get the frying right first otherwise just forget it
