Hi Chad, I am a biomedical student from the U.K. and this might be of use to David about his red meat allergy; If he you are bitten by a lone star tick (an insect) found more commonly in the southern part of America you can develop an allergy to red meat specifically to alpha-gal which is a sugar molecule found in mammals apart from humans, and once bitten by the lone star tick if you eat an animal product with alpha-gal in it you could have a delayed allergic reaction Hope this helps 👍🏼
