Just one thing, I believe in (geo)chemistry something is defined as organic if it contains atoms of carbon covalently linked to other elements, irrespective of whether it comes from living beings or not. I think if you define it that way you don't run into the trouble of having to explain why the calcium carbonate in the shells is not organic while coal is.
