The Rooibos Cocktail at The Aviary in Chicago

- Like a mad scientist's hot toddy, the Rooibos is a mix of Rooibos tea, lemon peel, orange peel, almond, vanilla, lemon verbena, mint, saffron, lavender, peppercorn, cardamom, Hendrick's gin, Luxardo maraschino liqueur, citric acid, simple syrup, and water. A vac pot, which has an upper and a lower chamber is placed at the table, dry ingredients in the top chamber and wet in the bottom. And because playing with fire at a table full of booze has to be the most dangerously fun idea ever, a small gas burner is placed under the lower chamber to bring it to a boil. Once boiling, it forms a vacuum, drawing the liquid into the top chamber and is flash infused, turning a cheery orange and filling the air with citrus and aromatics. After a quick stir with a cinnamon stick the burner is turned off, the liquid drops back into the pot and the cocktail gets poured. It's redolent of citrus, with a solid herbal punch from the gin and a nice subtle spice underlying the whole thing. It's the perfect antidote for chilly spring evenings and as it cools it gets an almost old school orange candy flavor. Plus, it's far more fun to watch than anyone could expect, especially under dim lounge lighting.
Still love to revisit this. Bought a similar apparatus years ago when I discovered this. Trying mushroom tea next. Still haven’t been to the Aviary, but I have been fortunate enough to experience Alinea. Cheers!

A restaurant in my area makes this rooibos cocktail, some modified ingredients though:
heat up 8 oz. gin, 2 oz. red berry vodka and 1.5 oz. simple syrup in the bottom chamber. In the top chamber, place the following ingredients: dried lavender, mint, sliced almonds, peppercorns, cardamom, vanilla, cinnamon sticks, Blueberry Rooibos Tea, and citrus (lemon and orange peel).
They charge $30 for the drink, kind of expensive but definitely fun to watch.
Very creative. I have the same syphon brewer but never thought of using it for anything but coffee.

How much alcohol is burned off during this? Surely some of it would evaporate since the top chamber isn't sealed.

I don't really get it, how come you don't get any residue of tea leaves in the lower bowl?
Camellia S Discovery there's a filter in the top chamber that prevents anything but liquid from dropping into the lower section.
There is, I usually use a metal filter but when the water boils the chain and the filter start dangling letting some leaves pass through

+wyan mertha No kits are available, but you can buy the vac pot at most kitchen supply stores and just piece it together from there!

I was just wondering if it is safe to heat alcohol this kind of way, is there any health hazard due to chemical reactions or you just evaporate some portion of liqueur and that's it? Thank you.

+Rene Kralovic Not really any different than cooking off alcohol in a sauce or a flambe. I suppose there's an infinitesimal chance that you create too much pressure in the bottom chamber too fast and blow out the vessel, but you'd need a heck of a lot hotter burner to pull that off.

Camellia S Discovery typically you'd have to heat the liquid and then steep it using a tea ball or something to that effect. This is faster since you keep the heat on and more theatrical (they make it at your table).
So actually you don't use Loose Tea Leaves but Tea Ball instead is that what you're saying ?
Camellia S Discovery no. I'm saying if you don't have this equipment you'd have to use a tea ball to recreate the cocktail.
Ooh, oke, well that is not really an issue, what's bother me is the residue in the lower bowl, I hear of a clip that you have to make in order to make sure the filter doesn't dangle during the boiling process, so I'm kinda curious how do make it. I watch several videos and notice that somehow the filter chain does not really move...

@verocity alcohol boils at a lower temperature than water. At the temperature they're keeping it at inside the sous vide bag it'd normally evaporate.

Honestly too many flavors present.I dont think the drink is the attraction here, just the novelty of seeing water travel up a tube.
Just like an herbal tea, really. You'd be amazed how tasty it is.

People don't go to "The Aviary" for cheap simple stuff. They go for the art. That may not be your cup of tea, and that's ok. Everyone is allowed to have their opinion. Just let others enjoy it.
