If you really want to use tamarind, try looking for fresh unripe ones. Unripe ones are heavier and when you scratch the skin it should be green underneath. Just boil it in a little water and when the tamarind is soft, mash it really well and then strain the broth. Then you can add that to your vegetables.
You can also use any sour fruit to make sinigang, so lemons and limes should work. Also try adding some ginger and tomatoes in the broth for fish and seafood sinigang. Hope this helps you out. Godbless :3

Amanda you should have used fresh green tamarind for your sinigang. Its way better than the tamarind paste. By the way, the way you cook sinigang is kinda different on how we cook it here in Philippines. Haha

I love sinigang. The way you prepared it is very different to how we cook it in the Philippines. We put the peppers in but not the spicy ones. I guess we just have different tastes.

instead of using tamrind paste you can get dried tamarind and soak it in luke warm water for half an hour. The concentrate is usually used to make things like sweet tamrind sauce

Matt & Amanda if you want fresh ingridients its better to use fish sauce and lemon juice or kalamansi than the tamarind concentrate coz the juices taste cleaner and not bitter since concentrates are made when the fruit is crushed with the seeds to make mass production of the paste and thats why the paste has a bitter taste to it like mass produced orange juce and freshly squeezed lemon is more sour and safe than paste try it there is diffrent type of sinigang and also add tomato slices and ginger for the broth when you boil it ginver takes away the fishy taste also rinse fish or any seafood with salt and vinegar put that mixture in a bowl and mix the fish or shrimp and let it sit for about 5 minutes and rinse well with water (DONOT save the vinegar and salt mixture throw it down the drain its nasty after you use it )it will take away the slimy and fishy smell from the seafood hope it helps if it works please give me a shout out enjoy :D

I've never used tamarind before, but I love cooking and thought I would research it. I think you used way too much. The internet suggested marinating, but don't marinade fish or chicken for a long time, as the sourness will cook the meat. Also, accompany tamarind with things like garlic and ginger to make it more savoury. Perhaps boiling it for so long may also impair the flavour? I only spent about five minutes looking online, I'm sure you can perfect it :)
