is there a way to know which direction your sit will be facing? I get dizzy if I am not facing the direction of flow

Unfortunately, no. They don't seem to know which was the trains will be oriented in advance, so they don't show the direction of travel on the seat selection diagrams.

How do you know if you’re choosing a forward facing seat? I get car sick going backwards

Unfortunately, you can't tell. They don't seem to know which was the trains will be oriented in advance, so they don't show the direction of travel on the seat selection diagrams.

One more question, do you think we will have plenty of time options going to Bordeaux coming out of CDG airport after a flight?

There are some direct trains from the CDG TGV station to Bordeaux, which is the easiest connection. You'd still want to give yourself at least a couple hours in case your plane is a little late and for passport control. If there isn't a convenient train from the CDG TGV station, the other trains to Bordeaux depart from Gare Montparnasse in Paris. You'd want to give yourself at least 75 minutes to get from CDG to Gare Montparnasse (it's the RER B train to the 4 or 6 Metro line). Happy travels!

What happens if you miss your train by a delay on a flight coming in to CDG?

Sorry for the delay replying. YT flagged your comments for some reason and I didn't see them until now. I think you'd just have to change to a different train at that point. SNCF will help if a train-to-train connection is missed due to a late train, but I don't think they do anything if an air-to-train connection is missed.
