I’m currently eating a pop tart
Or to sound fancy for Emmy,
I’m eating a lightly crusted french pastry with a sweet, yet tart cherry reduction. Topped with a cherry flavoured candied frosting with sugar crystals for an added crunch.

Fun fact about The Count: it's an old myth that vampires were obsessed with counting and you were supposed to leave a bag or barrel of grain or rice outside of your house and this prevented a vampire from attacking you because they would be compelled to count all of the grains, before entering to kill you, thus keeping them busy until the sun rises.

Coupled with my own childhood and raising my daughter pretty much alone, the Count and Big Bird and Snuffy and Oscar etc etc etc have been a very special part of my life for more than 40yrs. Love that show and all it has done for children everywhere. Thanks for the yummy recipe. My Mom has been in lockdown with stage 4 cancer all thru this ghastly plague. Nursing homes are one of the hardest hit. We have not been able to see her since March. We can now bring things and she isn't eating again. She and I love coconut. Perfect. My Mom made this 50 years ago. My Dad always wanted something for dessert after supper and this was something she could whip up fairly quickly after getting home from work. This and her mountain cobbler were always my favorites. Since I’m not fond of coconut, Mom would often leave out the coconut and bake as just a custard pie. Mom could have had her own You Tube channel if it’d been around them.
I also baked it myself when I was first married 30 years ago. Mom and I would bake it in two pie plates. Thanks for bringing back wonderful memories! I think I’m going to have to bake some impossible pies!

The surprise reaction this recipe has kind of reminds me of an AMAZING cake from the Hershey cookbook that my mom has made for my birthday every year. It’s chocolate, so the cake itself is completely different from this.... but it has a fun surprise reaction like this pie. It’s called the hot fudge pudding cake, I believe. Should be easy to find if you google it. You make basically a batter, put it in a pan, then on top of that you put just a dry mixture and pour water over it. When you bake it, you end up with this super delicious hot fudge-y, pudding-y sauce-y stuff on the bottom, and a yummy layer of chocolate cake on top. I would love to see Emmy make it and hear her opinion! It’s so good served warm with vanilla ice cream. 😻😻😻

@@mariyakatelyn5642 Definitely don't teach abstinence only. My eight year old son knows more about birth control than a lot of women (he's the kind of kid that asks weirdly specific and technical questions like "Mom, say I get married and we want to have sex, but we don't want a baby yet. Is that possible? How does birth control work? What are the side effects?" Did not expect to be answering those questions when my oldest was only six). But I do tell my kids that while it is responsible and wise to use birth control, every method short of hysterectomy has failures and the only sure fire way to not get pregnant is complete abstinence. I know personally people with stories like "I conceived twins with a fully functional IUD!" and "Yep, was on the pill AND used a condom..." and "MY TUBES WERE TIED. TIED!!" to not tell them that truth.

I made this with 50-50 white rice flour and oat flour, and replaced half of the milk with coconut milk (although you could do all coconut milk I think), and used unsweetened shredded coconut. I also halved the recipe to bake in a normal pie tin. It turned out so great, so tasty and creamy, and definitely sweet enough, so I don't know how you're supposed to make this with sweetened coconut flakes. I can only imagine it would be so crazy sweet. Definitely make this, it's so easy to make gluten and dairy free!

This was not the way to go. The custard was rubbery and not custard like. The butter bubbles up like greasy at the sides and actually came over the edge near end of baking and spilled in the oven. I make savory Impossible pies often (ham and gruyere with asparagus is a favorite)...I donate them to elderly couples because they can eat it hot, cold, or room temp and it can easily be breakfast, lunch or dinner. I usually provide salad also and if I skip the asparagus, I put another veg on the side. It's great as a brunch option too...bacon, sausage and cheddar! You can make them full size or mini in a muffin pan.
