Sounds wonderful. We make breakfast sausage and use lots of ground coriander. We buy the bulk seeds and ground up what we want to use. I love the smell as well as the taste. I do like trying new stuff, so I plan to try this.
My dad was a meat cutter, he always ground his own meat & used spices to make fresh sausage. So much better than what you buy premade. Miss Willow is a great helper!!
Tip after 24 hours make a small patty and taste that way you now if you want to change it I have been making my own for a few months that first batch will help you tweak if you want.
The artist who used to make them for me went back to college and no longer does pottery. I am hoping to be able to work with another artist down the road for another batch of mugs.

This recipe could almost be used as an Italian sausage. I mentioned in another comment, that to make it more Italian sausage-like, I would omit the sage and add some oregano and basil. I would do everything else the same way.
Are all the spices you use keto safe? I know Dr Berry talks about the need for a lot of salt in the diet but I don’t recall anything about other spices. I guess I could find the answer but I rather use your knowledge, lol. Thanks
Many premade seasoning mixes/blends contain questionable ingredients, including sugar. Regular herbs & spices though are so low in carbs, you would have to consume a LOT of them for them to make any sort of difference. For instance a tablespoon of black pepper has under 1 gram of carbs. But who is eating a whole tablespoon of black pepper?? A whole tablespoon of cayenne pepper would be about 3 grams. But again, no one is sitting down with a spoon and eating straight spices :) I have also never seen him mention anything about seasonings other than the need for the added salts/electrolytes, which I can certainly attest to.

It is a tremendous blessing. I can really only say to pray for the Father to open those doors and lead you to fellowship.
This is breakfast, but it does have an Italian sausage hint to it, particularly because of the fennel. I think to make it more Italian, I would add some basil and oregano, and omit the sage.

I’d say so! I use ground lamb by itself and occasionally mixed with pork.
Yes, you can use pretty much any ground meat.

I cook them with butter. You can also add oil/fat to the meat when you mix it if need be.
