I feel the same way you do about blanching. I don't have much room in my freezer either. I bought 20 pounds of tomatoes from our Amish community and made some diced tomatoes and Mrs. Wages Medium salsa that I canned, as well as making some fresh salsa to eat. The tomatoes I have in the freezer I will turn into juice and can it up because I only have 2 quarts left on my shelf. My tomatoes just aren't getting ripe because it has cooled off.
I love your new sign on the stove that says "Just roll with it". Your new t-shirts are so nice too. Don't you just love putting on a fresh crisp t-shirt that isn't faded or stained? The lasagna looked so good! You really used up your stash of cheese. Why not? Right?

I have been doing low carb for some time now and I love the zucchini lasagna. I also make zoodles out of them to eat with spaghetti. I shred up any extra and package in 2 cup baggies and freeze for zucchini bread in the winter. Makes a good gift to take to friends and neighbors through the holidays. Love your meal prep videos.
