Proving To My Family That Yellowtail Is Delicious

  • We originally planned to go spearfishing for tuna down in San Diego. We didn't have luck, so we went paddy hoping and caught small yellowtail and found a good size bonito. Let's do a catch and cook!
    Bonito isn't typically thought of as a good fish to eat. I beg to differ. It's great if you can bleed it well and keep the meat on ice.
    Yellowtail is excellent table fare. After we got back from the day of fishing, I brought some of the fish over to my wife's sister's pad and cooked them up a Baja/Asian fusion meal.

      when fresh, bled and kept on ice.. fry skin side down in hot oil until the upper surface starts turning white.. flip over and add half a beer or so to the pan until it's cooked through.. fluff with a fork and use for tuna cakes, tuna salad, smoked fish dip, etc.. excellent as sashimi, poke etc as well.. as long as you bleed the fish and keep it fresh on ice the first day or so...

    Key to Bonita is bleeding it, otherwise it tastes like 💩

    KEEP THE FISH IN THE WATER.. keep it's head down, and go overhand into the collar... just saying
