  • Kabazaiku (樺細工) is the traditional Japanese art of fashioning tea boxes, smoking accessories, and other woodworks out of the bark of a cherry tree.
    But the geniuses at hado_knife decided to collaborate with a Kabazaiku master to create stunning handles for their Japanese Chef knives.
    In this video I'm unboxing two Hado knives with gorgeous Kabazaiku handles. Having these knives around the house for a few days made sure Hado is now on my radar. These knives have impressive fit and finish, amazing grinds and are just oozing "Tamashi" (soul).
    These Hado Kabazaiku knives were first unveiled during the Ambiente in February 2023, Frankfurt - Germany.
    Unfortunately these knives are not mine, but I'm really grateful I have had these knives around the house for a few days.
    They were kindly borrowed to me by Rene, the owner of Meesterslijpers (www.knivesworld.eu)

    I love my Hado knife. Mine doesn't have that cool handle though, wish it did. Also, I've noticed your cat has developed an aggressive attitude.. I think you better sleep with one eye open at night 😹

      These Kabazaiku handled Hado knives were released last month, and they are definitely a game changer. So beautiful AND also adding extra grip.

      My cat is a sarcastic wise-ass, condescending and plotting to kill me. But deep down inside, he truly loves me. We're best buddies most of the times.

      @@chefknivesenthusiast I have the Junpaku... like the Sumi, it's also forged by Tanaka and sharpened by Maruyama, except it's in shirogami #1. I have become a huge Tanaka fan after using this knife, he is a true master. If I get some extra funds, I'd like to get that Sumi with that handle... looks so sweet and I'm sure the performance is top notch as well.

      @Unannounced Fart Thanks for sharing your thoughts/experience with the Janpaku! Yeah, Tanaka gets only praise from the people I know that own one of his blades. And Maruyama sure is an excellent sharpener by the looks and feel of these blades.
      I'm getting more and more afraid that the fully Kabazaiku wrapped handled Sumi Bunka is not going to make it back to Meesterslijpers.

    Great video!! I have the pleasure of owning a Hado Junpaka gyuto and it was my favorite purchase of 2022. This company doesn't overlook a single detail!

      The Junpaku and Ginsan series are also looking great. It's good to hear your experience with your Hado is super positive. It doesn't help me to resist buying one of these though. 😉 Yeah, this company is too legit! They sure seem to know what they're doing.

    "I would piss the shit..." Damn that thunder stealing cat! Great Vid, beautiful knives. This is the kind of quality work I would look for in a new blade to add to the collection.
    I prefer the partial laminated handle of the sujihiki.

      I like both handles a lot, but the fully wrapped handle has a more ergonomic feel thanks to the extra grip the texture of the bark provides.
      Hado definitely seems to know what they are doing. There was thought put into every single detail, and the execution of it all is impressive!

    Those are absolutely amazing in every detail. The entire time as l was watching you move the blades around in the light, l kept thinking that the lamination lines remind me strongly of my Y. Tanaka gyuto, and when you said he did the forging, that absolutely completed the love picture for me. After a few more thinnings, my Tanaka gyuto is going to look very similar. But now l am inspired to bevel and polish the spine and choil just like these. It's such an elegant touch. And l can honestly say that due to many life circumstances, it has been awhile since l have felt excitement over the prospect of collecting any more knives. But l think I'm going to shoot for finding one of these as my next addition.

      Those are the things you would notice. I'm not surprised. Yoshikazu Tanaka does amazing work and these Hado knives are just perfect. Not a single detail is left unattended by these people. I knew I was going to need one of these in my collection during and after making this video. Especially because of that Kabazaiku handle as well. So I'm over the moon with my 210mm Sumi Gyuto with Kabazaiku handle that came in today!

      @Chef Knives Enthusiast awesome, my friend! And l am happy to say that l just located and purchased the 180 bunka on my own continent. It should be here within the week, and l will doubtlessly create a thorough unboxing and cut test video, and then put my own edge on it. I have seriously needed a great bunka for a long time, so l am very excited.

      @Chef Knives Enthusiast also, l had to literally beat myself down from also purchasing the 240 gyuto. Because l already HAVE the ultimate 240 gyuto from Tanaka san. And probably after one more good thinning, it will be superior to any Hado gyuto. But only because Tanaka is perhaps the reigning master of blue 1. That said, l am very tempted to go after that knife spine and choil, and produce that immaculate beveled finish. Because that is just extra extra.

      @Chef Knives Enthusiast honestly, l am not sure. The handle looked magnificent, but l was so smitten with the blade that l barely noticed it. I can only hope the handle is as lovely as yours. If it does end up being the cherry bark veneered handle, rest assured that l will treat it very well.

      Haha, I've been in Japan for a month about 8 years ago. I did visit many knife stores, especially in Tokyo. Kappabashi street, Masamoto, Fujiwara, etc. But couldn't make it to knife cities like Echizen, Sanjo, Seki and Sakai that trip. I want to visit Japan again ever since! But my wallet disagrees.

      I don't have any knives with a burnt oak handle myself, but I do like the look of it. These Kabazaiku handles are on another level though.

      @Chef Knives Enthusiast I'm still hoping to find one of those Kamikoto knife sets in a thrift store for 5 dollars, scoop them up, and then subject them to every manner of destructive testing known to man. Not only would it give us all many laughs, it would save some poor, unknowing soul from being saddled with terrible knives. Btw, my Hado bunka arrived yesterday and it only has the plain oak handle. But the blade looks phenomenal. I only briefly drew it out to make sure all was well, and then repackaged it. I'll be doing my own unboxing video soon with some edge testing, food prep, and possibly a quick edge sharpening if it needs it. But overall, the knife is every bit as good as what you showed here. The grind on mine might possibly be even a tiny bit more ridiculous lol.

      All I know is that they are pretty much sold out everywhere and it will take one year for the next batch to drop. There is one "Hado Bunka Sumi BD1" available at Firma Moes in Amsterdam. They don't have a webshop, but you can contact them on Instagram. It is €499 with a Kabazaiku 'striped' handle (not completely wrapped).

    Without a doubt, some thing I have not seen before. I am curious how durable do you think those handles are?

      The handles seem to be crafted masterfully. I would be surprised if they don't last longer than me, a.k.a. they seem to be very durable and probably very low in maintenance too.

      they probably sealed it with urushi lacquer, which means sealed from water and hence much longer lasting than a regular wa-handle.

      Exactly, there's actually a shot in my video where you see the Kabazaiku artisan apply the urushi laquer on the bark. These handles are durable AF.

      @@joostbax8934 Er is net een doos binnengekomen. Die ga ik morgen uitpakken. De twee in deze video zijn de enige met zo'n Kabazaiku handvat. Wellicht zit er nog eentje in de doos van vandaag. Even wachten tot morgen dus. Dan weet ik wat we hebben.

    How come that everybody is talking about Hado these days? Few month back it was Hatsukokoro. It seems that some brands are pushed into the market in waves or something.

      I for one wasn't talking about Hatsukokoro a few months ago.
      Hado just released these Kabazaiku handled knives last month. That's why I am talking about them right now.
      I do get the sentiment of your comment, but isn't this just how the market works?
