I made it with 1.5x quantities because I wanted it to be bigger, but I still ended up having some extra dough and mousse, so I made some mini portions in two ramekins. They were really cute! I was actually thinking of that too. Making a collection for diabetics as well. Hope will be able to do that at some point. I think you can easily substitute the sugar here with xylitol for instance. And substitute the flour with a mixture of almond and coconut flour.
I love the ratio of cake to mousse. This should be a mousse cake trend. I often find the mousse layer often too large. I also advise adding a crunch layer using rice cereal, freeze-dried berry dust, and melted white chocolate. Otherwise good job🎉

Yes.. a white chocolate crunch layer would be awesome on this. I wanted to keep it as easy as possible...but if you have the time .. go for it :)
