- In springtime, make spruce tip simple syrup using fresh-growth tips from spruce, pine and fir trees. Use the syrup as a general sweetener, for cocktails (a spruce tip gin and tonic is wonderful), grill glazes, salad dressings and more. Recipe and notes:

I’m gonna make this and put it in coffee
It is quite nice! The citrusy, slightly piney notes with the roasty coffee seem like they might clash, but are very cool together... sort of like the pine and the roast in a Cascadian Dark Ale work so well together.
Now is a ideal opportunity to collect spruce needles :-)

How long does it last in the fridge ?
A few weeks to be safe. But I've had some last months before showing any signs of what might be concerning mold or other globs form in suspension.

I hot water bath for 15 mins (pint)/20 mins (quart). Like that I have ready to use spruce syrup on hand in pantry until next harvest season.
