Im assuming Coeptus made more than one icon per skill, and then chose between them, so the paint brush and the color palette were both for the art skill, but the brush was the one the devs chose. This theory can also be applied to the athletic skill and cooking skill.

Large vehicles cannot use the covered bridge and tunnel, due to restricted height clearances. Only cars, SUVs, pickup trucks, vans and other light vehicles, such as the golf cart and lawnmower can use the tunnel or covered bridge. All large trucks (including the box truck), ambulances, buses and the DOT pickup and xfinity vans cannot use the covered bridge and tunnel.
I think the extra skills were concepts for different logos for the same skill ex: the food and drink could also be cooking but the decided the other one

At 1:40, the dumbbell was actually the old trophy for maxing out the athletics skill a long time ago. However the trophy is no longer obtainable.

I think they can add a building skill, you could level up by tasks: use basic shapes, build a small house, etc
I think you forgot the point of the video half way through, unused/old versions of GUI is not a cancelled update, stuff like the bank *_is_*
That's fair. Since the unused GUI never actually made it into the game I considered it cancelled. Thanks for the feedback.
