To get super black you can add 2 drops of yellow to cancel out the purple tint. I am a retired cosmetology instructor now baker. I try it on my apples and it works perfectly.
Ok so I've been making candy for years and the rest why your mixture is overflowing is simply because you need a bigger pot that's all. It's not because of the coloring etc... But you also don't suppose to stare your mixture and till after you take it off in a fire.
How are you able to make the candy consistency so watery like, but still stick? Like when you dip the apple the candy is literally running off that to me is the best consistency ever.
So I tried this cleaning method. Epic fail. It cooked my apples and I had to throw a dz of apples away. Oh and I had 2 events the next days. Smh. I'll stick to what works best for me...but I love learning new concepts

@Savvylicious Arrangements question... I've noticed on different videos, that you've suggested different times and oven temps. 120° for 30 min, 200° for 10-15 min, 350° for 5 min....which is it?

Put a wooden spoon over your candy mixture at the beginning to keep it from overflowing. Remove the spoon when it reaches 280°
Have you tried putting a wood stick over the pot to stop the over spilling??? Love your videos❤
