The app he switched to looked to be a remote mixing app to adjust his in ear mix. It's really common for small and even sometimes bigger gigs to not have a monitor sound guy/girl and have every musician do the in ear mixes themselves. The main app he is on is most likely a song sheet or notes. Might also be the setlist, but most likely not because that wouldn't require a tablet...tablet comes in handy if you have to flip pages a lot (for example of you have a sheet for every song) and setlists are usually only one page
