Almond Croissant Cookie Recipe | Inspired By Brooki Bakehouse | Not TOO Sweet | No Stand Mixer

  • My almond croissant cookie recipe, inspired by Brooki Bakehouse, will amaze you! These gourmet cookies have a generous amount of the same rich almond filling that you would find in an almond croissant (also called frangipane or almond cream) surrounded by a classic sugar cookie dough. They are crunchy on the edges and soft and full of almond flavor on the inside. They’re definitely decadent but surprisingly not too sweet.
    Recipe (yields 5 extra large cookies)
    Sugar cookie base:
    1 stick or 4 ounces of salted butter, softened in microwave
    ¼ tsp salt
    ¾ cup white sugar
    1 tsp vanilla extract or paste
    1 egg
    1 ¼ cup sifted white flour (180g)
    1 tsp baking powder
    Almond cream:
    6 Tbs salted butter, softened
    1/3 cup white sugar
    ¼ tsp salt
    1 egg
    2 tsp almond extract
    2 Tbs of white flour
    1 cup almond flour
    1 cup of sliced almonds for topping
    Optional dusting of powdered sugar
    Bake for 20-25 minutes total at 375 deg F, reduce heat to 325 deg F for last 5-10 minutes of baking if edges are browning too fast

    I just made these but I browned the butter instead and oh my goodness… I can’t recommend enough! I’m even eating one as I type this comment lol

    Wow! I can totally make these! I don't have almonds but have pecans and walnuts to maybe sprinkle on top? I do have almond flour though. Could you make it just one big cake though in a 9x9" pan instead of two giant cookies?

      YAAAY! I'm so excited to hear that you have the ingredients on hand to make these. I'd love to hear what you think of the recipe. Oooo...yes, chopped pecans or walnuts to sprinkle on top would be wonderful. They might brown quickly so you might want to keep an eye out and turn down the temperature a bit if they do. I've never thought of making this recipe into a big cake but I think it's definitely worth trying!

I'm planning on making an upcoming video on that but in the meantime you can adapt my superfood sourdough recipe (ua-cam.com/video/jKSe9i-xHL0/v-deo.html) by leaving out the seeds and reducing the water to 1½ cups. The instructions are the same. I hope that helps and I appreciate all your support! ❤

    Just double checking 1&1/4 cup of flour is 150g in description it says 180g

      Hiii and thanks for clarifying! If you have a kitchen scale, go with 180g flour. If not, 1 ¼ cup was my approximation based on how I measure but that can vary a bit person to person. I hope that helps!
