I have global gs3 petty knife, it is sharpened on 15 degrees convex edge. Convex is method where they use belts to do rounded bevels, if you later use stones will be flat bevel. I use spyderco triangle sharpmaker and I am OK so far, steel is really something,it sharpens very easy and fast
I was curious about that line behind the edge and was never able to find information about it, it almost looks like sandblasting. Im interested in a review about the other knife you mentioned too.
Yes that line bogs my mind too. I think for those kitchen knives it is some kind of finish behind the edge. That other brand I mentioned is Arcos from Spain, video review is long overdue from me…
Tough choice, especially because those are totally different knives. Globals are usually more universal, Myabi most likely will have finer edge, and you would need to be more careful about it. If you want to have better cutting performance, or just to show off, Miyabi. But then you will need to care for it more. Less show off, still a fine edge to hone, Global. but in general, then those good knife makers have a sweet deal and you really need a new knife I usually say go for it. you will get top quality product for a very good price. American market. never pay full price.
I am doing this UA-cam channel just for my own pleasure so far. I can afford all those knives and don't really want to monetize this content. Hope that my viewers appreciate that I'm not asking them to go to referral link or make them watch the ad.. On the other hand I have so many knives which were given to me or I could by them for pennies so if I could sell all that junk it would be a fortune, maybe one day.

Im having a hard time between choosing a Global chef or Miyabi. Right now Global has a sale for 7” with a pairing knife for $100.

23 years I am cooking and cutting almost everything, Global are not good choice. Not good grip handle, not good for chopping bones,quickly get dull.
I heard similar opinion on Globals from pro-chefs too. I have one and use it from time to time, definitely not for chopping, but OK to make salad .
