Back in the late 70's, my sister's best friend was on vacation with her family for a week, and when they came home....there was glass shards imbedded in the kitchen from a glass gallon jug of apple cider that was sitting on the counter. The sun from the kitchen window was on it every day. The shards of glass even were stuck in the refrigerator door!
Printed this recipe right away, it looks so good.

Could you use water kefir as your starter liquid? The only other thing I have is the brine from a carrot garlic fermentation

I used Kombucha that I had in the refrigerator. I realized after I poured it all over my ingredients that it needed to STAY refrigerated:(. I’m still going to use it, it just won’t be fermented for the 2 days.

How come you need a starter? Can you just use water and salt like ever other ferment??

Because fruit is higher in sugar and you don't want to let it get sour like vegetables, so you need a starter to jump start and shorten them ferment time

I don't think I'd call maple syrup sugar (very different on the glycemic index) and a ferment consumes sugar...
@@MelissaKNorris plenty of fructose (fruit sugar) in that recipe too. Does it all get consumed by the fermentation process? Is the result considered friendly to a low-carb, sugar-free (or almost sugar-free), clean, healthy ketogenic diet?
I’ve been doing so well with keto, sometimes more ‘ketovore,’ that I don’t want to get off-track during the holidays. But I’m certainly open to ketogenic-friendly, holiday recipes. ☺️
@@rickowen4410 it's still fruit, how much sugar that gets consumed varies on temperature of room, fermentation time before consuming, etc the only way to know would be to check your glucose numbers before and after eating to know how it impacts your insulin response
