Yes correct your right Rhea,Thomas Jefferson when to France and had for the first time had Mac and cheese and brought the recipe back to USA it is I guess the foundation for other islands and countries to put their own twist or own way of making this dish
Chef Rhea (and anyone else): [1] Have you ever experimented with diced, grated or mashed ground foods instead of flour/biscuits for stuffing? . . . [2] I saw that you used Eggplant (vegetable) in your stuffing. Have you tried other vegetables? . . . [3] Just thinking that there are so many ways that we can revise traditional recipes (often arising from historical periods of lack, poverty, and scarcity of quality ingredients) to make much more wholesome versions of favourite dishes. E.g., use herbs and spices instead of added salt and added sugar. We have too much diabetes, hypertension, arthritis, asthma, obesity, cancer, and heart-disease . . . so these questions are serious ones.
Hi Brent, yes there are recipes for making the stuffing gluten free...both by using ground food and by using gluten free breads ect instead. I note your observations about our food culture and I hope we are afforded a forum for deeper discussion in the future...Check out my vlog comming soon to the_chef_conection on ig and fb. Thanks for watching!
As a Barbadian to another Barbadian you're doing very good, Give Thanks.

Lots of moving parts, trying to keep up, lol. Looking forward to part 2; loving the execution of the cheese cake. Blessings.
