    *1 cup = 240 ml
    *1 tbsp = 15 ml
    *1 tsp = 5 ml
    Yield: 14 buns
    Ingredients:
    🥚 Filling
    2 salted duck egg yolks
    50 g (3½ tbsp) unsalted butter, room temperature
    50 g (½ cup) icing sugar
    20 g (2½ tbsp) milk powder
    20 g (2½ tbsp) custard powder
    🥚 Dough
    150 g (½ cup + 2 tbsp) warm water
    4 g (1 tsp) granulated sugar, to activate yeast
    3 g (1 tsp) active dry yeast
    300 g (2¼ cup) Hong Kong flour / bao flour / low protein wheat flour
    8 g (2 tsp) granulated sugar
    3 g (½ tsp) table salt
    7 g (1½ tsp) vegetable oil
    _______________________________________________________________________________________________

    *1 sdt = 5 ml
    Hasil: 14 buah

    2 kuning telur bebek asin
    50 g (3½ sdm) mentega tawar, bersuhu ruangan
    50 g (½ cup) gula halus
    20 g (2½ sdm) susu bubuk
    20 g (2½ sdm) tepung custard
    🥚 Dough
    150 g (½ cup + 2 sdm) air hangat
    4 g (1 sdt) gula pasir, untuk ragi
    3 g (1 sdt) ragi kering
    300 g (2¼ cup) tepung Hong Kong / tepung pao / tepung terigu protein rendah
    8 g (2 sdt) gula pasir
    3 g (½ sdt) garam dapur
    7 g (1½ sdt) minyak sayur

    Tip:
    1. if you don’t like that much butter you can substitute 40% of the butter with water. Just boil the water before putting in.
    2. If you substituted some butter with water, you can also use stevia instead of powdered sugar. Stevia requires extra moisture because it doesn’t melt like sugar so if you have extra water in your mixture it will absorb nicely.
    3, the powdered sugar amount in the recipe is very sweet. Use half is still fine.
    4. If you don’t have custard powder just substitute wit a tablespoon of cornstarch.

    Instead of the soft, oozy filling when steamed, ours turned out to be compact like those of butter bun instead :o What's your advice?

      try adding evaporated milk or full fat milk, I read somewhere that the milk is what making them runny ( I usually compare more than 3 recipes when I want to cook or bake something)

      Boleh coba diskip sis. Tepung custard itu seperti tepung maizena / pengental tapi ada susu bubuknya. Kalo hasilnya kurang kental, ntar tambahin maizena atau banyakin susu bubuknya ya.

      Hi, thank you! we can use any kind of fine sugar. Coarse sugar just might not dissolve as easily.

    Hallo sis. Aku coba bkin bakpao tp pake tepung tangmien mix trigu. Tp pecah ya jadi nya mekar bgt gt. Klo pake tepung pao ini dy ga akan pecah ya ka?

      Klo pake tepung thangmien di sarankan ga bole kak krna beda tepung, krna thangmien bukan sejenis tepung hongkong kak makanya bisa pecah bakpao nya

      Hi, they're different products, but you can use the same amount of instant yeast here.

      Instant dry yeast no need to dissolve in water first, can just add to the flour directly.

      Hi, bread flour is too high in protein. It's better to substitute with all-purpose flour.

      Apa isinya bocor keluar dr bakpao kah? Kalo iya, mgkn kukus kelamaan atau bungkusnya kurang rapat.
