The challenge of Tsukasa Miyawaki, a baker who has traveled the world | Sourdough bread making

  • A young production chief, Tsukasa Miyawaki, admired the "Tartine Bakery" in San Francisco, U.S. West Coast, and trained in Norway. He was selected as the head baker at the opening of the bakery "VANER" in Taito-ku, Tokyo.
    VANER's popular products include authentic sourdough bread, cardamom rolls and cinnamon rolls that recreate the taste of Norway.
    VANER's sadly closed in November 2022, but Miyawaki and his partner, Nozomi, went back to work at the Norwegian bakery.
    While working at the local bakery, they are seeking to further develop the taste of the bakery and what a bakery should be to the local community.

    Ah… I feel the same right now, doing work that I feel like I should love but somehow I’m struggling to find meaning in it. His expression of it with baking, losing sight of what it meant to him and then trying to find it again, that really touched me (I cried).

    As I was watching this my husband commented that he thought was hearing a Portuguese accent in the young man’s speech. Perhaps so! Thank you so much for documenting these bakers! It’s really mind-opening for me. Also emotional.

    Schade das man euer Gesicht nicht sehen kann. Keine persönliche Ausdrucksweise zu sehen. Der nächste Nachteil solche Masken 😷 sind nicht gut für das eigene immunsystem. Zu wenig Sauerstoff kommt noch dazu . Schön wie du in der Welt deine Lehren gesammelt hast. Dein Croissants sehen sehr toll aus auch dein Brot dein Kuchen. Alles richtig gemacht . 🍞🥐🥖🥨🥯🍪🎂🍩☕️
