Yes it will crystallise but it will melt in that water again later ..after adding water as shown in video and wait till the sugar crystals melts after that u add corn flour
That's y I can't understand y it becomes light jelly like not the thick crystal stretchy.. it's not the starch its something else..am wondering wat it is

Add few drops of fresh lemon juice to stop from crystalizing.
Add little warm water or lemon juice drops

When you eat Omani halwa from out don’t you get that aroma of saffron so only saffron give that smell if u skip no problem but won’t get that smell
