  • Ok so this seems like a no brainer really but there is an art to pulling very good citrus peels for twists. In this Video I share my method for pulling nice peels without cutting yourself. This video was done because someone asked me how I get such nice twists for the srinks I make and present, So I thought it might be good to share the method. Hope you guys find it useful.

    Good advice! A little trick I use is to slightly flatten the orange on the counter beforehand, right along where you're about to peel, which helps get a nice wide peel, specially with smaller oranges lemons and limes. It also reduces the amount of pith on the peel.
    I'd also love a peeler with a slightly curved blade, get some perfect peels.

    I'm so grateful someone finally made a tutorial for this. I feel like this isn't covered well-enough for home bartenders that don't have loads of fruit to go through to learn the basics. Have you found that citrus right out of the refrigerator is harder to peel? I mostly make drinks at home and so I keep almost all of the citrus in the fridge so I don't have to worry about them going bad as quickly.

    Another very helpful tutorial Leandro!! If only this was available about 2 weeks ago before I took-out a slice of my fingertip and nail. Also, realizing the ripeness of the fruit is key.

      I watched this video just for that reason! I got one because Anders Erickson had one, sliced my finger, and then proceeded to look up "how to use a y peeler safely"!

    I always peel ‘top to bottom’ rather than around.. I get shorter peels but I use the orange a handful of times. Going around the fruit looks like it really limits the number of peels you can get off the orange to 1 or 2..?

      I can get four good peels off an regular size orange, then I juice it and use the spent husk to make Citrus Stock! Sustainability!

    thanks for this... next time can you do a lemon? I've had too many accidents with a Y peeler so I usually just use a pairing knife which gets me a nice thick peel. I usually go back and trim the pith a bit with the knife. It takes a little longer but it comes out really nice.

Although I did know how to pull a peel properly, I enjoy that you extensively explain and show the basics and make them very available for anyone who want to create a home bar or learn about cocktail making! Basically learned more from your channel in less time than I learned going to a bartending school for 3 months.

    I've been waiting for a tut on peels, thank you! Kinda hoped you'd use a lemon though, since they're harder to grip and give me the most trouble. Do you not suggest using a knife? I find the peel does release some oils before zesting.

    I just use a knife and then filet the peel from the pith along the cutting board to get a nice thin garnish without any pith

    nice video as always, but one tip. Bend a slight curve into the blade for easier, wider and less white pith peels

    Your vids have a lot of a peel!
    Never occurred to me to hold the blade or the end of the peel. Will try this next time!
    For straightening out the edges, I use a knife every time - I'm as anal about this as you are about double straining. :P

    I need to get a peeler shaped that way. I have a peeler where the handle is lateral to the blade and I feel like it makes its difficult to control the peel.

    I peeled my finger so bad one night peeling and orange with a straight peeler.....ended up in the er and had completely cut off my nailbed back to the second knuckle......learned to never do that again!

    This is such a simple concept and difficult task, I remember the first time trying to get a zest I had peeled off a small brittle thin circle of orange skin.

    Your peels have always made me jealous, so I went out and bought myself a Y-peeler last week. Promptly sliced my pinky the first time I used it. If only I'd waited a week for this video to come out...

      Here for the sliced finger club tees…I have an oxo y peeler and I still can’t figure out how to get more pith on my attempts! It is great for slicing fingers though 😂

    Is there a reason no one talks about using a chefs knife to cut off peels? It seems much safer

      Unless you’re very very controlled with the knife most times when you peel with a knife you get too much pith which will impart bitter flavors into the drink, the cut is usually very thick.

    Do you have a recommendation on what type of orange to use for expressing oils into a cocktail? I picked up some Cara Cara this weekend for my Negroni and hardly got any pith/oils?? I'm thinking maybe trying Naval next time, what do you think?

    One thing I’ve learned is to peel the fruit above the drink.You lose about 30-40% of the zest just by peeling it

    Hope you all read this but is there any way you guys can do a short vid or something on pulling a citrus peel again? But specifically getting less or more pith?
    Sometimes I see Leo doing a peel and gets minimal pith and other times gets great pith! I have an oxo peeler and for the life of me I can’t get anything more than very faint pith which makes expressing peels and garnishing impossible without obliterating it! 😢

      Same issue here! There must be one more clue to getting a good peel. I’ve tried a highly rated Y peeler, a straight peeler, new oranges, older oranges, cold from fridge, room temp, lots of pressure and less, and so on many times. Same result every time: thin flimsy outer later only, no pith, which crumbles and releases no oil. What’s the secret? Leandro, any suggestions?

      @@mrwte3 something I actually found was a better option, and prevents slicing your finger off, is a stainless steel cheese slicer. I get great pith and it doesn’t amputate my pinky…still can’t figure out how they get good pith on a Y peeler though 🤷🏼‍♀️ there are some videos on UA-cam that show them in use for peeling citrus. Best $10 I’ve invested in my bar so far

    I find 90% of it is with the initial bite. If it I don't get it deep enough then no matter what happens the peel will be rubbish.

    That was actually pretty useful. I’ve come to realize that I’m using oranges that are too ripe, which give too soft a peel to properly express oil from.

    for someone who only occasionally needs to peel an orange, do you put it in the fridge after, will it stay for a week or two, I hate to waste fruit

      the left over orange? You can put it in the fridge, or even leave it outside. And you can juice it after you've pulled all the peels you need.

    6 minutes? I literally JUST taught my brother how to pull a peel in about 20 seconds (drinking Blacktail Cuba Libre's tonight).
    My general school of thought: if you see any of the "flesh" of the fruit after you peel, you've gone too deep. But using any quality peeler should mitigate that. Leave bare bladed knives to the experts. Sometimes I use a knife at work (when some dilt misplaces or loses my peeler) and you can use the knife blade on a cutting board to carve the zest into interesting shapes. Makes a nice garnish.
