    Looking forward to seeing how you go! (The amount of starch/carbs is why I had to stop following the ration diet. It made me lose weight, but even after allowing for my diabetes with the rations my blood sugars were not happy.)

    I have a box of beans too😅..they are good to keep on hand for sure. I love a good pot of beans. 😊❤

    To bulk up the rice I would stirfry some veggies and even some chopped up cabbage (which is low glycemic/low carb) and basically make a rice pilaf. You could even add any bits and bobs of ground beef or even beans to add protein and make it an all in one dish that will reheat nicely. or later in the week, make it into a casserole with a white sauce and bread crumbs (or very small amount of cheese) on top. With the coffee, you could always keep the grounds from that first pot and make a weaker but still drinkable 2nd pot of coffee for yourself. What you don't drink from that pot, keep in the fridge and reheat it later the next day. (I know some coffee snobs would roll over in their grave, but I have don't this with no issues.) also iced coffee with a slice of chocolate eggless sponge cake is the best!

      @@GarouLady I made a version of the fish flan that Frugal Jake made. I didn’t film making it, but I’ll film tasting it. It smells so good, it will be for tomorrow.
