Intricate and subtle movements probably. Limits are probably more with the 3D models or computing power. The models are pretty basic afterall. I don't know if the lives are sending out actual on the fly renders to the stream or if it's pre-recorded. If it's pre-recorded, they could def up the production quality by a heckin lot.
If you watch some of the best choreo even just on YT, you will see that a lot of it comes down to super smooth and intricate body isolation that is quite honestly extremely hard to capture using something like mocap.. I mean, just look at some of the 3D streams these girls do and the technology struggles with capture hands sometimes, let alone super fast and precise dance choreo. Not to knock on the tech though, even just capturing live movement the way they do and imposing it onto a 3D model almost real time and transmitted to our eye balls is already a feat in and of itself.

Basically, the 2.7B setup still can't capture high-speed motion? Maybe the nodes in the tracksuit just needs to be bigger or something, so that the camera can track it better..? Maybe change the color of the nodes as well, depending on body parts.

If she's comparing herself to dance practices of some of the top tier dancers, that's more like just you and your choreographer just practicing two to three bits of your entire set. There's things to worry about like timing, readability, blocking, photogenics, key posing, transition, position and all kinds of other stuff. A 5 minute choreo isn't built in a day, after all.
