Thanks for the info on, "Amarillo hops". Im like you, do NOT like Cascade, for reason you mentioned. I like to replace Cascade with , Galaxy hops, but hard to find, without paying for shipping. Cheers!

Joe I always use true to style yeast im not bringing down US05 but most brewers don,t use dry yeast but use what you want Sir
Exactly! I was shooting for a very mellow, next to no yeast character, and good ol US-05 did the trick with this one.

You sold it so well that I gonna brew it, but but need to replace the galena hops. I was thinking maybe use centennial or summit instead. What do you think? What would you use if not galena? Cool video!!
awesome video and IPA joe! with your experience what's been the best way of carbing your beer in the keg? force carbing with 25 psi and shaking for a couple minutes? letting it force carb at 25 psi for a couple days without shaking? or setting it at serving pressure for a week or so? asking cause your's has perfect carbonation. again love your videos!
Thanks Abraham! Actually, I do the set-and-forget method, where for my beers I set them at 11-12 PSI and let them cool at 38F for about a week. Typically they're perfectly carbed for my tastes by that point. I used to do the shaking method, but found it caused more problems than solutions, so switched to the set-and-forget method and have never looked back since!
Looking to get myself a Spike Brewing kettle. Looking into the different ports such as ones for whirlpooling. Any recommendations as of any additional ports to get as I'm new to the all grain world? I want to get any additional ports added before I order so I have them welded into the kettle.
Honestly, I'm loving my setup so much, I can only imagine my only upgrade moving forward is going to be larger sized equipment so I can start production... LOL

Just putting together my system, which is very similar to yours...still waiting on the kettles from Spike Brewing. A question, now that you've got a few brews under your belt, with the new system...do you notice any flow problems, or plugging problems with the plate chiller? thanks
Thanks for getting back to me. I've, now, had my system up and running for a while now...have gotten a decent number of brews done. I haven't had any problems with the plate chiller plugging up either.
It's really a nice system and those Spike Kettles are a joy to Brew...and they clean so easy!
I do a lot of whirlpool hops and have made good use of a (side) hop spider.

Side note...my current beer is a cream ale, in which I used local popcorn for the corn selection. He wort was nicely interesting

Haha! Good stuff! One and done! The IPA looks beautiful - I was drinking my own TrainWreck IPA (made with Amarillo, Citra, and Willamette) when you put your huge glass up to the camera - color is almost the same - made me thirsty, so I took another gulp! Cheers from central China (and Portland whenever I have time to go back home!)

Thanks! It's just too 'catty' I guess for me. I find it to be too pungent, but like you said, to each his own! It's our best selling hop at my shop, so clearly I am not in the majority on that one!
