Shamroles, also known as sweet tubes of puff pastry filled with snow or cream filling, have a long history in European confectionery tradition. The origin is often associated with the Austro-Hungarian monarchy, where they were a favorite delicacy in the courts and in the better pastry shops. Their fine structure and fluffy filling made them ideal for festive occasions.
INGREDIENTS:
1 package of puff pastry
2 egg whites
180 g granulated sugar
1 vanilla sugar
0.5 dcl water
PROCEDURE:
Cut the rolled out puff pastry into approximately 2.5 cm strips. We roll them into a spiral on molds and place them on a paper-lined tray. Bake in a preheated oven at 180°C until golden. After cooling, carefully remove the molds from the tubes.
For the filling: Bring sugar and water to a boil and cook for another 2-3 minutes. Beat egg whites and sugar until stiff peaks form. If a glassy layer forms on the water, remove it and mix it into the whipped snow. Finally, add vanilla sugar.
Fill the decorating bag and fill the tubes from both sides. Wrap the finished tubes in powdered sugar.
