In case you have to trim more than one angled tenon get a wedge or scrap piece with oversized mortise of appropiate angle as hold on or "third hand". The same way you have a v-shaped piece to clamp round stock.
I enjoyed watching you mark out the lower stretcher tenon shoulders. I did something vaguely like that on a (not-a-joint) stool that I made years ago. Even though I'd read up on it, I was even more of a newbie back then, and felt as if I still had no idea what I was doing. But it turned out fine (insert sigh of relief).
