Ingredients: 400g Lotus biscuits 1.5tsp baking powder 380ml milk, room temperature 125g Biscoff spread, melted Lotus biscuit crumbs 1) Preheat your oven to 170°C/ Gas Mark 3½/ 150°C (fan) 2) Line an 8x8" baking tin with baking paper. 3) Finely crush the biscuits in a blender. 4) Pour the crushed biscuits into a bowl and mix them together with the baking powder. 5) Add the milk and whisk until smooth. 6) Bake for 15-20 minutes until a toothpick comes out clean. 7) Pour the melted Biscoff spread over the top and smooth it out. 8) Sprinkle the Lotus biscuit crumbs around the edge. 9) Leave the topping to set. 10) Slice it into 16 pieces. 11) Enjoy!
Made this a couple of times now and it's lovely. I melt some milky bar along with the biscoff spread for the topping. I've one in the oven now, added chopped Cadbury fudge to the mix as an experiment. Hope it works 🙂
The reason the recipe worked for her is if you think about it - cookies have flour, sugar, butter, and many ingredients a cake might need. Consider the cookies your dry ingredients, and the warm Milk added to the crushed up cookies makes it into a cake matter

A tip for crushing biscuits is to put all the biscuits into a ziplock bag. Then take a rolling pin or something similarly heavy and use that to crush the biscuits. Just smack it with the rolling pin (I think a heavy hardcover book could work too if you don't have a rolling pin), or after smacking it a few times you can also use rolling motions with the rolling pin over the bag to get finer crumbs. Just make sure that the ziplock bag isn't too small and that there's not too much air trapped inside the bag with the biscuits, because when you smack it with the rolling pin the bag can explode. Should take you around five minutes, most likely even less!

It you wanted it to be more specific you can do some simple maths. I searched it up and a 124g pack has 16 biscuits, so 400g is 51-52 biscuits. So you just need to make sure you have 26 packs of 2 (this is usually how it's written on the Lotus biscuit packaging).
