Gina, I'm a disabled veteran, and I'm stuck in a 317lb wart with wheels, under my butt, and I swear if I didn't find your channel, I'd still be microwaving my dinner. You make it so easy, that I took that leap, and decided that I could actually do what you do, and cook an actual meal, that didn't need to me microwaved or boiled. I'm actually doing it, and I feel more independent!! You have no idea how this feels. I mean, my health caregiver goes to the store for me, and picks up my list of ingredients, but I'M actually doing the prep, and the cooking. I really feel fantastic about it!! It's not as complicated as I thought and. I have to tell you, it brings up my spirits and I feel better about myself and my situation. Thanks so much for opening this new door for me!! I wake up in the morning and watch your video, and decide what I can cook. I'm feel almost normal and whole, again. One more thing, I'm praying again before and after I start and when I finish my cooking. It's really been a great experience for me.

Baking the hard taco shells in the oven 4-5 minutes makes the shell less inclined to break apart when you bite into it. Like the idea of adding Velveeta cheese to the ground meat

I love that taco Bell chipotle sauce! I use it on my tacos every single time. It's a little mildly spicy so if you don't like spice at all, it's probably going to be way too spicy for you lol.

I enjoy watching your cooking YT channel. Not sure if you have “The Pampered Chef Mix N Chop #2583” if not, it’s an awesome kitchen tool (found on Amazon) for separating ground beef.
Tacos use to be and still is one of my easy go to meals...My mom would fix them...I'd request them for my b-day too..We liked/ preferred the soft shells. The large soft shells ( the size of a dinner plate ) we'd put the cheese on first then the meat that would melt the cheese...lettuce, tomatoes & chopped onions...( I know some incorporate beans in the meat and some put the beans on the side. (We didnt do beans with the tacos)
I can only take mine Mild..so I would squeeze a little ketchup on top of my taco. I would the pick it up...take a bite...then ma6be after the second bite it'd fall apart...then I would get out the fork...Then go for it. ..😋...after the 2nd taco I couldnt hardly breathe...at that point I was Fat & Full )))

It was 56° here in South Jersey ,close to (philedelphia) it was sunny which made it very nice.
I prefer the hard crunchy tacos . The soft tacos I like for making breakfast burritos or enchiladas or Mexican pizza or Mexican lasagna.. My husband likes the soft because he has sensitive teeth ...he smothers the sour cream on first, then the refried beans, some rice ,tomatoes,lettuce ground beef and Monterey Jack ! Gina I just want you to know my taco 🌮 turned out so delicious I fixed it with Spanish rice and then made a pound cake with strawberries on the side I have gained 25 pounds since I been cooking your recipes smh but it's all good 🤣🤣

I absolutly love your spirit and vibe, the way you explain technique in cutting meat, hand washing etc. Gina girl there's just one comment I have for you, "Why do you use so many processed ingredients vs fresh natural ingredients? Store bought sauces, marinades, and seasoning packets like you used in your taco meat all have added sugar and excess sodium, it only takes a few minutes and a few extra ingredients to make your own a healthy option. I get the time saving or cost but food is our sustenance.
