  • This video shows you how people in Korea make kimchi and how they get the main ingredients- like cabbage, salt, garlic and so on.
    Although the basis of kimchi is the lactic-acid fermentation of vegetables pickled in salt, the liberal addition of fish and seafood can assist the fermentation process and provide nutrients that would otherwise be scarce in winter, such as protein and calcium. (Arirang TV)

    This is such a thorough documentary of the art of an amazing food. I have just recently discovered Kimchi through fermenting foods. I was hooked after making my first batch. I can't imagine what the Kimchi in this video taste like!! It can only be amazing.

    I just finished making my personal record amount of kimchi. I used 22 cabbages. I can hardly conceive of what it would take to convert 7000 cabbages to kimchi. I am a Canadian. Someday my dream is to go to Korea and join in with wonderful people like these to make literally tons of kimchi for the less fortunate.

    What a beautiful documentary about the countries that produce Kimchi. I just tasted it this past year and it was wonderful, a little hot for my palette but I found myself craving it. I could feel my mouth salivating just thinking of it. Love it with rice. Thank you so much for making this video.

    i'm actually vietnamese but my mum has 2 beautiful korean friends and they are great people. Everytime they make kimchi, they give me a little box of it and it taste awesome. I enjoy it everytime I eat it :D P.s the video is really great. DAEBAK :D

    I've learned to love kimchi and certain Korean favorites where Iam from since 16 yrs old when I started watch kdrama, all of their shows involved good food which I envied bc I couldn't make it and since my family are of a different culture with different tastebuds. But a few of my siblings LOVE kimchi, I'm 28 and live in Hawai'i surrounded by a mixture of ethnic cultures and foods, but I love kimchi and eat it with saimin, meatjun, chicken etc. I love kimchi, especially with rice.

    I sometimes have ' Korean Kimchi' with 'Red kidney beans and Tomatoe Pasatta' with lemon juice and lots of Garlic .....Taste is Gawjus and plus for some Reason it helps my Digestive system function Better, This Culture seems so Peaceful. RESPECT

    I make kimchi for over 20 years,that I learned from my mother in low.I am European though.I am still fascinated with kimchi and Korean wonderful culture.It never will be enough bezause there is so much to explore.

    when i buy a jar of kimchi ill let it sit inside it for about 2 months before opening it cause when i purchase it it hasnt really been fermented as much but when it is the texture totally changes and its crisp and tasty

    Dirty? Everything is washed well, then fermented with salt. It's a fermentation process that produces lactic acid, which actually prohibits the growth of dangerous bacteria - that's why it keeps for so long. The bacteria that do grow are very good for your digestive tract. It's one of the healthiest things you can eat.

    Sure, I ate kimchi in Korean restaurants back in the USA before I moved here. But, truly, nothing compares to the rich flavor and pickled taste of genuine Korean kimchi made right here in the republic - 국산. What will I do when I go home and can't eat it with my rice?

    Crazy but, to me, a perfect combination for a guy who lifts weights and wants to break away from the garbage we americans usually eat:
    Kimchee, with squashed, ripened avocado on the side, and a fifteen ounce can of
    alaskan salmon-
    all with a squirt of chili garlic salt on top.
    Eaten cold, of course.
    Simple, easy, healthy and great taste!!!

    Im not a korean, but i eat Kimchi for every meal because its good for my health and makes my meal more enjoyable no matter what i eat. It is also more available and affordable in the market. I love sushi too. Sadly, it still people preference when it comes to judging foods. However, calling a dish which has been a symbol of an entire nation and loved world wide "nonsense-dirty" is just wrong....

    Sushi is one of the great contributions to cuisine.
    Kimchi is another great contribution to cuisine.

    I love learning about and cooking the foods of the word, but the dish I am most proud of is the first batch of kimchi I made.
