Step 1: Gather the ingredients
1. Black eggplant
2. Water
3. Sugar
4. A clean, sterile glass vial
Clean the black eggplant well and cut it into small pieces.
In a glass bottle, put a layer of blackened eggplant pieces, then sprinkle a teaspoon of sugar on top. Repeat this process until the flask is full.
Slowly add water to the flask until all the pieces of black eggplant are covered.
Close the flask tightly and leave it in a warm, dark place for 10-14 days for the solution to ferment.
After the fermentation period has passed, filter the solution to get rid of the blackened eggplant pieces and sediment.
