Just got the leather strop today. Very good quality. Really like the suede, silky smooth. Highly recommended. I don't think I've ever got my knife this sharp. The strop is a game changer as Ryky mentioned.

Ooh - that was positively delicious to watch - quite incredible! I found you because I'm trying to figure out how to sharpen a really old style thread cutter on a 1907 Singer Model 28 machine (seriously!). It was so blunt you could rub your thread tails on its edge all day and you might polish the thread - but certainly not cut it! I've got sandpaper in 600, 800, 1000, 1200, 1500 and 2000 grit (and also some fingernail buffing "cushioned" boards that have some ridiculously high grit (they make your nails shine like mirrors)). But I'm clueless on what to do with them when it comes to these thread cutters. The trouble with them is they're not mostly flat like a knife blade, they're a semi-circle (and a reverse "circle" that goes round the presser foot bar of the machine). I've been able to get a bit of an edge, but it's still slightly semi-chewing the thread rather than really cleanly cutting it - and it seems super-easy to make it quite blunt again. Do you (or does anyone else) have some advice on how I can reliably get a really sharp edge on these fiddly little things, please? Thanks heaps for any advice or tips at all. (I do have a Dremel tool but it seems to me that unless I really know what I'm doing with that I'm likely to have something go very wrong, very fast!) :-)
Sandpapers are great for polished finishes. They keep perfectly flat for grinds like the scandi-grind instead of gouging out like whetstone. Get a nice flat leftover aluminum block from a metal shop. A small, palm-sized aluminum block is great for moving the sandpaper against the grind instead of the other way around.
God bless you this is an amazing video. I found out today that there's different grit ratings for sandpaper. So it's very possible to just use Sand Paper and super adhesive spray so that it doesn't move a lot.
The studio looks great. Thanks allot for your videos, I've been watching you doing your wizardry for the last month and got the confidence to order water stones. This week I received my kink kw 1000/6000 and Chosera 400, and went ahead and sharpened all my knifes. Although it's my firs time sharpening on water stones, I manged to get extremely sharp knifes that are pleasure to use. Thanks agian.

Burrfection ryky good tip from me go and check out dlttrading.com then go search for bark river or bark river supplies and then strop they have strops with compound they are not bad I would recommend if you already have a strop and can make more that you should buy the compounds. Don t listen to the constructions tho because they tell you to light with a lighter on the compound. If you wanna know more go and check out DutchBushcraftKnives and tipe in strop (Also just buy the 6000 and 12000 but don t tell anyone i told you) Thanks for the respond

@@vigneshp14 I use water paper. I wet the paper and stick it to a tile. I start off with 600 grit, then 1000, then 1500. Usually 1000 is more than enough. Light pressure on both sides. Done.

@@vigneshp14 practise! That's all. Use the same motion all the time. You might be regrinding the blade slightly, so until that sets in, it'll seem like you're having no effect. Take one knife and practise with that one over and over. Don't worry about shaving arm hair or splitting paper, rather use a tomato to check sharpness.

Video Request: How to sharpen a pizza wheel. Amazing background, btw. You should hang one of your signed Jet Lee posters, and maybe a knife or 2. I think adding too many more than that might make it too busy.
Buy a high grit sandingwheel.Place the pizzawheel in a small angle against the sandingwheel.It will rotate the pizzawheel and sharpning at the same time.Be carefull
Do you have any videos on different sharpening techniques? Like push/pull, diagonal/horizontal, etc. So we can pick and choose what technique we feel most comfortable with.
What about finer grits? Like 800/1200 etc. You could even step down from coarser grits to remove more material and finish with a smooth polish... it would be interesting to see if that's worth it!
yeah, there are LOTS of tests i'll be doing, similar to what you suggested. i was only testing this one 320 grit paper. but will do similar tests you suggested for future videos.
You mentioned testing the grit rating of the brick. How does one go about doing that? I have a few stones from my Great Grandfather, and I've always been curious to figure out what grit they are and would like to figure it out. There are no markings on them. The one that has a wood case doesn't have any label either. I also don't have any stones of known grit since these have always worked for me. Thanks for any advice/direction you have.
Do you have pictures of them? based on the little description you gave im assuming that they arent carborundum stones since those tend to be cheap and come in cardboard boxes (at least in the US) If they are actual stone then they might be arkanas stones. I would love to see what kind of stuff people used back in the day.
Ryky the new background looks AWESOME! Not sure if i'd put too much up there. It could get too busy real fast. I think that less is more. But I would like to see maybe a cleaver and an old chefs knife, maybe something that looks fairly beat up that was picked up out of a thrift store, etc on one side with maybe some western theme. And on the other perhaps some kind of Asian or Japanese art coupled with a single or two very japanese looking knives. Since those two styles are the heavy hitters on your channel.

Love your reviews and videos. I love the practical approach to knife sharpening you use. Anyway. I’ve use a lot of sandpaper for sharpening. I’m no expert but I’ve found 3M spray adhesive works great. If you let it set for an hour or so it won’t slip. At least that’s my experience. I do prefer water stones. However if I have to grind away to fix a very blunt or damaged edge I bust out the sandpaper. I do not have any corse water stones. My lowest one is a King 1000. I’ll “set the edge” with 120 grit or 240 grit sandpaper the jump to the water stones. My go to camping knife is a mora. I’ve sharpened it exclusively with sandpaper. Well I used my water stones once and it took off a lot of the stone. Or it seems like it did it’s got a lot of contact area when sharpening. I also use a 1x30 belt sander and an Edge Pro. The belt sander does not get used on expensive knives. The more I sharpen by hand the less I use the belt grinder and the Edge Pro. Hand sharpening is just mor satisfying. I’ve glued 2000 and 3000 grit sand paper to the Edge Pro film blanks. They seem to work pretty good. I’ve tried using binder clips to keep the paper in place. Glue was the best. The 3M stuff does not cone off easy.
The sand paper has the advantage in that it wears out much faster that the grit gets finer and finer. By the time he stopped the grit went to 600 or 800 or more, whereas the stone grit remains the same at 320 throughout the sharpening.

Microscopes are unbelievably cheap these days. I actually bought an incredible quality inspection microscope (not high power, just basic 100x) on ebay from a closing lab for $60. We know a sharp edge when we see one, but estimating damage on a blade would be a good use for a microscope.
+drew anderson totally agree Drew, it would be good to see the difference the Chosera 400, 800, 3000 (and other stones) and strop makes to the edge scratch marks, polishing and cutting performance
I agree too. Maybe it doesn't have to be microscope, but definitely a better edge testing solution. Just from this video, shapton glass 320 can already achieve push-cut, so I don't think paper is a very good indicator. At least the difference in that gliding sensation feels too subtle in audience's eye, or at least to me.
You can use a piece of wood with a slit cut in the middle of the ends and clip the paper on with strong paper clip things, it only works for back strokes. You can put some hard foam/spongy material on the other side to sharpen a convex grind, probably not useful for cooking knives, but for more multipurpose knives it gives you and easy to sharpen, strong edge.
First of all, Thank you! You showed me how to sharpen really well through your videos. I just have a question. I picked up a new yoshihiro yanagabi and I took to to my 12,000 grit shapton stone to give it a really sharp edge. Now it is really sharp but I have spots on the blade that are mirror polished. I know my stone is completely flat and I don't know why it's doing this. Please let me know your input.
@@adrianarciaga1521 4 years later, but I'll still answer... you use a flattening stone on it to make sure it is truly flat. Also, it could simply be you hand. If you're not applying even force on the blade then the stone will have a hard time hitting the entire blade edge length.
Great video! You might want to try stropping on the flesh side of the leather (the rough backside) as opposed to the grain side, and add some jeweler's rouge or stropping compound on there. That's how most of us tend to strop our leatherworking tools. Takes Exacto blades from sharp to scary!

Honestly background looks great as is. The idea of viewer art being rotated in and out might be pretty good. However what you have now is fantastic, it was the first thing my eyes caught and they liked it very much! :)
For one or two sharpening sand paper works quite well. Even glued to cardboard... most can be used dry. Stropping strokes avoid cutting the sand paper..
very impressive. I am quite surprised that one piece of 320 grit paper can achieve that sharpness. I was under the impression that you would need to go higher grits with paper. BTW, does sand paper give you a different edge profile compare to what whetstone give?
the reason I am asking is because I heard from somewhere that sharpening on water sandpaper is a great way to give knife convex edge, if you back the sandpaper with something "bouncy", like a mouse pad. I don't know if you would want convex edge on chef knife, but maybe that's something you can try next time.
Hello ,I have been watching you video for a while now and I have learn a lot sharping but question about maintain. I recently brought a miyabi mizu 8' chef knife and I was wondering what is the best way to maintain it from the wood handle, how to do mirror polish a knife, and how to keep it sharp on a day to day basis. After every time that I have use my knife, I would strop it on a leather strop with 1 micron diamond honing spray. Do you think this is that best way to keep my knife razor sharp or is there something else i can add to my routine.
thanks for writing and trusting my opinion. i don't think you need to touch up your knife that often. once every 2-3 days or realistically, once a week with what you are doing is probably more than enough. but i'll put together a video about this topic soon.

when you strop some micro materials are being pulled off, so do you need to clean the leather stopping plate? how? and is there a difference on testing the edge with magazine paper and printing paper? are printing papers harder to cut because they are thicker (if they are high quality)? thank you!
you don't really need to worry about cleaning the strop. you can, but the materials being pulled off are so small, you really won't have any issues. i am told magazine paper is very hard to cut since it has lots of clay in it . will do a side by side video to show that at some point vs newspaper.
Hey, I don’t know if you’ll respond to this, but I’m looking at getting some stones. I only have the budget for 2/3, so I won’t be getting a >3k stone. Can I use 10k sandpaper after the 3k stone??
When making knives, I often use sand paper to sharpen them initially, and would strongly recommend you some finer grit paper to finish. like 800 or 1000... But I assume you of all people know, I was just surprised you didn't.
Again...why do you dull the blades first?? Is there a functional reason? They were both fairly sharp out of the box already...was wondering how long it would take before yo cut through the paper..actually, using sand paper...is good for any one learning or has been at it for a while...to fine tune their pressure...for consistent pressure...keeping the angle better... Stropping...should always be part of the process....sharpen/polish/strop...if blade has no damage...
i love the background, i think you should only hang some of your favorite knives on the wall, not to many. or maybe at least 1 of each type of knife you have. will you do an unboxing on the kiritsuke? i wanna hear your thoughts on the knife and how close is it to other kiritsukes made by more popular companies
i see you stepped out of the light and joined the darkside, goood, i always did favor the empire. All joking aside as someone pointed out it does suck out some of the light, but at the same time puts you more in focus, don't know if that's partly filter, but i like it. maybe a small rack with room for 3-5 most memorable/current favorite knives, and same with a couple of whetstones ?

Im not familiar with strobing with leather so some sort, just normal sharpening with whetstone. Is there a budget or diy way to strobe u mention with newspaper can do some demo? Btw ur videos are addictive keep it up
I really like your channel, mate. Keep it up :-) One question though : when you go from grits 300 to 1000 to 5000 what you do on each step? Both phases (regular passes plus stropping) on each grit or just stropping on higher grits?
i only do single stroke strops when i go above 1000. i don't do the passes after 1000, since you have a higher change to slightly messing up the edge, vs the single stroke method.

The background looks very nice! maybe you could put some selection of your preferred knifes hanging on magnets and some sort of art as i said before - could be some random pictures you like, or a paint or whatever you decide. I have some experience with leather. It make a difference at the end, specially with harder steel in my oppinion. I think after a polishing stone might be even greater. By the way, i bought a masamoto VG for myself because of what i saw from you channel. This knife is really amazing. I'm enjoying it very much. Awesome new setup. I would suggest not to use magnetic strips but buttons instead. That way you won't see the bars where there are no knives and you can go non linear on the arrangements.
Burrfection Just a quick search on amazon brought up these, www.amazon.com/dp/B01NBM0Z02?psc=1. I would glue them to the wall. For a less "permanent" solution you could attach them to a tab and then screw the tabs to the wall. Contact me and I could 3D print you some custom magnetic holders.
I like using good wet and dry paper, right upto 10,000 grit for my razors. I only ever use edge leading strokes or it just kills the paper and ruins the edge.
Just goes to prove that the skill of the sharpener is more important than the sharpening device. Dig the new backdrop, nice to see the recycled materials.
using a bit of white compound will change that opinion. I'm using a 1x30 belt sander now ... leather belt with white compound... first time I've ever felt what PAST hair popping sharp is.
As you know, green is medium grit, white is fine. depends on what you want to accomplish. I used green on hand stropping for the past few months. Now that I'm on a mechanized leather belt system with white... I'll never go back. Green doesn't even come close to what I'm getting now.

I have a 1k/4k combo stone and a standalone 8k stone. Can I use the (currently perfectly flat) 1000grit stone to flatten my slightly uneven surfaced 8000 grit stone? (both corundum) ..or is that a terrible idea? lol
I remember a while back hearing that magnetic knife strips were somehow bad for the constitution of the edge. Doesn't make a lot of sense when you consider it but anyone know where it came from and whether or not there's anything there?

Considering a lot of manufacturers and knife smiths use belt sanders to shape and sharpen their knives fine and ultra fine grit sandpaper should have no problem sharpening try some 3000 grit or higher
Have you considered cutting corners of phonebooks? A lot of knife sharpening videos on youtube, show how easily sharpened knives (even pocket knives) cut through corners of phonebooks with ease.

@@vigneshp14 I use water paper. I wet the paper and stick it to a tile. I start off with 600 grit, then 1000, then 1500. Usually 1000 is more than enough. Light pressure on both sides. Done.

@@vigneshp14 practise! That's all. Use the same motion all the time. You might be regrinding the blade slightly, so until that sets in, it'll seem like you're having no effect. Take one knife and practise with that one over and over. Don't worry about shaving arm hair or splitting paper, rather use a tomato to check sharpness.

Buy a high grit sandingwheel.Place the pizzawheel in a small angle against the sandingwheel.It will rotate the pizzawheel and sharpning at the same time.Be carefull
Do you have any videos on different sharpening techniques? Like push/pull, diagonal/horizontal, etc. So we can pick and choose what technique we feel most comfortable with.
What about finer grits? Like 800/1200 etc. You could even step down from coarser grits to remove more material and finish with a smooth polish... it would be interesting to see if that's worth it!
yeah, there are LOTS of tests i'll be doing, similar to what you suggested. i was only testing this one 320 grit paper. but will do similar tests you suggested for future videos.

Q. By sharpening so much to a very fine edge, doesn't that make it easy to "roll" the edge when using on food or other material?
You mentioned testing the grit rating of the brick. How does one go about doing that? I have a few stones from my Great Grandfather, and I've always been curious to figure out what grit they are and would like to figure it out. There are no markings on them. The one that has a wood case doesn't have any label either. I also don't have any stones of known grit since these have always worked for me. Thanks for any advice/direction you have.
oh who knives.... sharpening the brick next to some other stones and seeing how it feels is one way. i'll start there.
its' really hard to identify stones once labels are removed. it may be German, American, etc.

Do you have pictures of them? based on the little description you gave im assuming that they arent carborundum stones since those tend to be cheap and come in cardboard boxes (at least in the US) If they are actual stone then they might be arkanas stones. I would love to see what kind of stuff people used back in the day.
Ryky the new background looks AWESOME! Not sure if i'd put too much up there. It could get too busy real fast. I think that less is more. But I would like to see maybe a cleaver and an old chefs knife, maybe something that looks fairly beat up that was picked up out of a thrift store, etc on one side with maybe some western theme. And on the other perhaps some kind of Asian or Japanese art coupled with a single or two very japanese looking knives. Since those two styles are the heavy hitters on your channel.

Love your reviews and videos. I love the practical approach to knife sharpening you use. Anyway. I’ve use a lot of sandpaper for sharpening. I’m no expert but I’ve found 3M spray adhesive works great. If you let it set for an hour or so it won’t slip. At least that’s my experience.
I do prefer water stones. However if I have to grind away to fix a very blunt or damaged edge I bust out the sandpaper. I do not have any corse water stones. My lowest one is a King 1000. I’ll “set the edge” with 120 grit or 240 grit sandpaper the jump to the water stones.
My go to camping knife is a mora. I’ve sharpened it exclusively with sandpaper. Well I used my water stones once and it took off a lot of the stone. Or it seems like it did it’s got a lot of contact area when sharpening.
I also use a 1x30 belt sander and an Edge Pro. The belt sander does not get used on expensive knives. The more I sharpen by hand the less I use the belt grinder and the Edge Pro. Hand sharpening is just mor satisfying. I’ve glued 2000 and 3000 grit sand paper to the Edge Pro film blanks. They seem to work pretty good.
I’ve tried using binder clips to keep the paper in place. Glue was the best. The 3M stuff does not cone off easy.
This is what I came to this video to figure out. Good to know you don’t need to spend a ton of money. Worth it for the high grit stones though
The sand paper has the advantage in that it wears out much faster that the grit gets finer and finer. By the time he stopped the grit went to 600 or 800 or more, whereas the stone grit remains the same at 320 throughout the sharpening.
My grandfather tought me to sharpen knifes on the back of ceramic plates. It works great.

Microscopes are unbelievably cheap these days. I actually bought an incredible quality inspection microscope (not high power, just basic 100x) on ebay from a closing lab for $60. We know a sharp edge when we see one, but estimating damage on a blade would be a good use for a microscope.

totally agree Drew, it would be good to see the difference the Chosera 400, 800, 3000 (and other stones) and strop makes to the edge scratch marks, polishing and cutting performance
I agree too. Maybe it doesn't have to be microscope, but definitely a better edge testing solution. Just from this video, shapton glass 320 can already achieve push-cut, so I don't think paper is a very good indicator. At least the difference in that gliding sensation feels too subtle in audience's eye, or at least to me.

You can use a piece of wood with a slit cut in the middle of the ends and clip the paper on with strong paper clip things, it only works for back strokes. You can put some hard foam/spongy material on the other side to sharpen a convex grind, probably not useful for cooking knives, but for more multipurpose knives it gives you and easy to sharpen, strong edge.

First of all, Thank you! You showed me how to sharpen really well through your videos. I just have a question. I picked up a new yoshihiro yanagabi and I took to to my 12,000 grit shapton stone to give it a really sharp edge. Now it is really sharp but I have spots on the blade that are mirror polished. I know my stone is completely flat and I don't know why it's doing this. Please let me know your input.
it's possible that a flat stone may have air gaps/bubbles which and cause those spots. inspect the stone.

@@adrianarciaga1521 4 years later, but I'll still answer... you use a flattening stone on it to make sure it is truly flat. Also, it could simply be you hand. If you're not applying even force on the blade then the stone will have a hard time hitting the entire blade edge length.
Great video! You might want to try stropping on the flesh side of the leather (the rough backside) as opposed to the grain side, and add some jeweler's rouge or stropping compound on there. That's how most of us tend to strop our leatherworking tools. Takes Exacto blades from sharp to scary!

So in your stropping you didn't have to use a compound on the leather strop, why?
For one or two sharpening sand paper works quite well. Even glued to cardboard... most can be used dry. Stropping strokes avoid cutting the sand paper..

BTW, does sand paper give you a different edge profile compare to what whetstone give?
you can achieve good results just by stay consistent. the edge profile is a bit thinner, since the sandpaper does not give, like a whetstone.
the reason I am asking is because I heard from somewhere that sharpening on water sandpaper is a great way to give knife convex edge, if you back the sandpaper with something "bouncy", like a mouse pad. I don't know if you would want convex edge on chef knife, but maybe that's something you can try next time.

Hello ,I have been watching you video for a while now and I have learn a lot sharping but question about maintain. I recently brought a miyabi mizu 8' chef knife and I was wondering what is the best way to maintain it from the wood handle, how to do mirror polish a knife, and how to keep it sharp on a day to day basis. After every time that I have use my knife, I would strop it on a leather strop with 1 micron diamond honing spray. Do you think this is that best way to keep my knife razor sharp or is there something else i can add to my routine.
thanks for writing and trusting my opinion. i don't think you need to touch up your knife that often. once every 2-3 days or realistically, once a week with what you are doing is probably more than enough. but i'll put together a video about this topic soon.

when you strop some micro materials are being pulled off, so do you need to clean the leather stopping plate? how? and is there a difference on testing the edge with magazine paper and printing paper? are printing papers harder to cut because they are thicker (if they are high quality)? thank you!
you don't really need to worry about cleaning the strop. you can, but the materials being pulled off are so small, you really won't have any issues. i am told magazine paper is very hard to cut since it has lots of clay in it . will do a side by side video to show that at some point vs newspaper.

When making knives, I often use sand paper to sharpen them initially, and would strongly recommend you some finer grit paper to finish. like 800 or 1000... But I assume you of all people know, I was just surprised you didn't.

Again...why do you dull the blades first?? Is there a functional reason? They were both fairly sharp out of the box already...was wondering how long it would take before yo cut through the paper..actually, using sand paper...is good for any one learning or has been at it for a while...to fine tune their pressure...for consistent pressure...keeping the angle better...
Stropping...should always be part of the process....sharpen/polish/strop...if blade has no damage...

i only do single stroke strops when i go above 1000. i don't do the passes after 1000, since you have a higher change to slightly messing up the edge, vs the single stroke method.

The background looks very nice! maybe you could put some selection of your preferred knifes hanging on magnets and some sort of art as i said before - could be some random pictures you like, or a paint or whatever you decide. I have some experience with leather. It make a difference at the end, specially with harder steel in my oppinion. I think after a polishing stone might be even greater. By the way, i bought a masamoto VG for myself because of what i saw from you channel. This knife is really amazing. I'm enjoying it very much. Awesome new setup. I would suggest not to use magnetic strips but buttons instead. That way you won't see the bars where there are no knives and you can go non linear on the arrangements.

I like using good wet and dry paper, right upto 10,000 grit for my razors. I only ever use edge leading strokes or it just kills the paper and ruins the edge.

nope. i believe you don't need any on a good leather strop
using a bit of white compound will change that opinion. I'm using a 1x30 belt sander now ... leather belt with white compound... first time I've ever felt what PAST hair popping sharp is.
green compound is probably even better
As you know, green is medium grit, white is fine.
depends on what you want to accomplish.
I used green on hand stropping for the past few months. Now that I'm on a mechanized leather belt system with white... I'll never go back. Green doesn't even come close to what I'm getting now.

I have a 1k/4k combo stone and a standalone 8k stone. Can I use the (currently perfectly flat) 1000grit stone to flatten my slightly uneven surfaced 8000 grit stone? (both corundum) ..or is that a terrible idea? lol
you CAN.... just make sure you go the entire length of the stones and don't use much pressure. just take your time.

Considering a lot of manufacturers and knife smiths use belt sanders to shape and sharpen their knives fine and ultra fine grit sandpaper should have no problem sharpening try some 3000 grit or higher
sharpening with sandpaper is not the problem, it's whether or not, regular home grade sand paper can handle getting wet

Have you considered cutting corners of phonebooks? A lot of knife sharpening videos on youtube, show how easily sharpened knives (even pocket knives) cut through corners of phonebooks with ease.
