  • Oyster omelet is one of Taiwan’s most iconic street foods. The star ingredient in oyster omelet is, of course, the plump oyster. Chigu Lagoon in Tainan is the largest inland sea of Taiwan, and a major oyster farming area. Here farmers cultivate oysters on racks with reusable oyster shells. Due to the irregular shape of oyster shells, there is no way the machines could do the shelling. For more than 300 years, farmers on the west coast of Taiwan have been giving their sweat and tears to provide mouth-watering oysters.
