I do so much miss FL & the fresh seafood. Incredible looking dish. I cook my chili all day then chill overnight before reheating to really let the spices meld together. I cook both with & without beans just depending on my mood. I often use beans when I do pulled pork & beef but tend to leave the beans out if I use chunky ground beef with left overs chili used as a hotdog/ sausage sauce.

Lockhart, Texas. And here's what you got to understand in the nutshell. Beans are beans. Chili is meat parts. They are two very unique and different profiles. And how you adjust different beams and all their flavors is an entire art all to itself. And it soothes the pallets of many attired traveler and many a gourmet chef. And chilly can be made with all kinds of meats parts and spices and colors and fillers. And chili is a staple in the winter time of the southern attitude and I mean attitude because that's where our friendly attitude comes from gathering around a warm bowl of chili the winter time. So chili and beans are just two completely different foods and experiences and memories. When you mix them together It's like mixing two great things together You don't get another great thing. You put the great Billy Joel with the beautiful Christie Brinkley and you get an ugly baby ( That's a terrible thing to say). But hey if you want to put great things together then it is your prerogative but you can't call it chili and you can't call it beans. You have to call a beans with chili or chili with beans :-) Oh and by the way, brother I would eat your chili joyfully any day :-)

The head meat of those fishes are the best tasting. Me and my friends would grill the heads like you did and would pick the meat off the heat and just eat it from there, just use lime, salt, and pepper as a dipping sauce and it’s great!

Aloha, and yes to beans (Goya). Love the fire starter, reminds me of Alaska. Always packed a ziplock of shredded apple box waxboard and laundry lint if I wanted to cook trout or dolly varden by the river or lake. Did you use the leftovers for enchiladas or burritos?

Aloha, and yes to beans (Goya). Love the fire starter, reminds me of Alaska. Always packed a ziplock of shredded apple box waxboard and laundry lint if I wanted to cook trout or dolly varden by the river or lake. Did you use the leftovers for enchiladas or burritos?
We ripped through just bowl after bowl. Didn’t even think of burritos!

I am from Texas and had it both ways. I would say it is more common in Texas with beans than without. Chilly without beans is also very good.

@@CookingWithClams Born and raised in Houston and I have eaten 100s of bowls of chilly. Just my observation but could be different in Austin or Dallas area. But now I also live in Florida.
