Harry, you don't make a roux with cornflour, what where you thinking? If you want to use cornflour to make gravy ( yuk), you make a slurry and add it to the stock. Also, boconcini would be closer to the cheese curds that Canadians use than block mozzarella.
As a Québécois, I appreciate your version of our national dish. Using mozzarella as an alternative to real cheese curds is a reasonable move, and if your poutine tastes half as good as it looks, you’ve got yourself a winner!

Just an atmosphere thing... Honestly, I miss the older videos where you just pop a fire on the ground and cook!!! I sincerely congratulate you on your success and growth! So glad you cooked out of the car with less gizmos and gadgets, you look less like you are on a "cooking show set". Really grabs the attention and gives more "go out in nature and cook" inspiration :)
As some who is gluten free I would recommend using arrowroot for making gravy and I am from Perth as well you can get from woolies or coles.. I am writing my own gluten free recipe cook for camping

As a Canadian it is a French Canadian word so more a pootine than a putine name. Oh and you have to have proper cheese curds not the crap in Australia. There is a company near Adelaide that makes cheese curds also you can pan fry haloumi which gives closer on the texture to cheese curds. This is a good attempt for someone who has never had the real thing. My feelings are a salt ted by the green stuff.
Pretty sure they're "French fries" here because soldiers in WW1 brought back the idea of fried potatoes from Belgium where everyone and his dog eats fried potatoes from street vendors on every corner. Yeah, the soldiers mixed up France and Belgium but thats another story.

Salt is life when it comes to cooking mate you should look at installing a small slide out spice and herb rack in the 4x4 then you can never forget it

As a Canadian, awesome job. Cheese curds would make it better but you have to use what you got. Come to Canada and try the authentic version.
We also forgot the SAlt on our most recent High Country trip when I was cooking your cold oil chips. I had to campsite hope to beg for salt. Got some!

Try soaking chips in salt water before cooking will crisp up nicely
Little bit of lemon juice in the water will help prevent oxidation of the potato.
