Since it was already cooked then most of the bound water in the chicken already came out, you should not strain it (you are straining off everything that dissolved in the water and fat during the first few minutes of cooking), add less fat and add the seasoning mixed with a small amount of water, and try to use ground chicken or at the very least a fine dice (since you don't like the texture of half the breast you should consider ground chicken) With large pieces straining most of the fat will stay in the pan if you use a slotted spoon. You should not pour any kind of fat down your drain ever. I also would not recommend using butter, butter is only ~80% fat this give much worse heat transfer than a normal cooking oil.
