On the face of it, Nigel seems a little mean to Evelyn, but it's a great camaraderie and comfort they have. Takes really good chemistry to be able to bounce off each other that easily and carelessly
I haven't seen all the podcasts yet but I also hope it's mostly for the comedians in them. The self-deprecating effect. Or to be able to laugh at yourself is powerful medicine!

Also, FYI, Northeastern USA is full of caves. Kentucky, Tennessee and several other midsouthern states also have extensive cave/cavern systems

That "not too sweet" remark on dessert is so amusing. I never thought of "no too sweet" as highest compliment when it comes to desserts but it's certainly an expression commonly used among aunties in the family when they're asked to critique on the dessert. wwwwwww

We have caves in the UK. Been to a few on holidays. Derby have some, cheddar gorge and some down south at Lands end. Many more places too.

crispy pork with a côte du rhône if it's not highly perfumed, otherwise a bordeaux (cahors I'd say) is way better - you usually need a heavy character wine to balance with chinese/asian food.
In french culture, red wine is usually served with meat and white wine with fishes and shell fishes. Cheese can go with white or red wine, depending on the type of cheese and the character of the wine. I'm asian and in London but spent 20ish in France.

I usually cook rice with electric pressure cooker. That works too. I don't know whether that is available in Britain but is available in Australia.

The US had a lot of caves... lots of abandoned mines, lots of lava tubes and lots of sea caves. I just think they tend to be either cold or in the middle of nowhere or both.
I didn't expect Uncle Nigel to be this nice to Evelyn and Mike, to be this cute and adorable because honestly I don't like his jokes and roasts much but in the podcast he is gold 👍
