  • In this week's episode, Patrick and Stuart share all of their harvests from this season at the chateau, including elderberries, blackberries, figs, and sloe berries, as well as what they made with each of them. Patrick also shows/shares his process of making fig chutney.
    Join Patrick and Stuart on their journey to find a neglected, forgotten, or crumbling château in France, and then continue to follow them as they work on its restoration, rénovation, decoration, and furnishing. Along the way, they will also create and share videos on their preparation for having gîtes for guests, and an event venue in their chateau (wedding, birthday, anniversary, organization or club meetings, retreats, etc.).

    To me you seem to be very active in doing things around the Château. You need to do things in their seasons so to say. Now is the season of harvests and food storage/ canning. There is no point in decorating rooms when the electrics, walls, floors and infrastructure aren't finished. You can prepare as you are by readying the materials that will eventually become the room decor. Do things that make sense to you and at your own speed. Don't kill yourselves by trying to please the viewers that want instant gratification. Your core viewers are patient and willing to enjoy any content you provide especially if there is history or skill knowledge involved. It is easier to build from scratch than to employ restoration techniques and the original Château was not built in a day, not in a week, not even in a month, so we're with you for the long haul. Great work Stuart and Patrick (and family). 🏰

      Dear Edward. What an entirely wonderful and insightful comment. You are, of course, 100% right. There are thé works for each season and with restaurations and necessary updates (as requières by law), we try to work smart. It is so true that building from scratch is easier. Never thought about it and it made me smile to realize what you wrote is so true. Ha!
      We are prepping for some rooms. Getting input for fabrics and furniture. It will take a few years before we are where we want the chateau to be. And then there are the outbuildings. 😮. Love your comment and we appreciate it tremendously. 💕💗💕

    When I worked I was a project manager even though I am retired each project I do on our home I still create a project plan to make sure we don’t have undo work and waste money ❤

    I love figs! I’d sit in the tree til I was sick 🤣🤣🤣 Love watching you can. I hope you used good gin 🤣🤣 Love this vlog. Outdoor work would be good videos too. Freeze drying fruit and veg is another option. Can preserve for 25yrs and can be reconcentrated any time. I’m sure you’ll be able to find a sponsor! You can make your own vanilla too, get the pods and throw in a sealed big jar w vodka. ♥️🇫🇷🏰

    OH MY GOODNESS !
    Just love, love, love these recipes. I am a gin drinker and so is Stephanie and all of the La Lander gang. We are going to need a factory Patrick ! Ha, ha ha ! The figs are also a favorite of the chateau as you know from you're wonderful chutney they rave about. As a kid my father and mother had major fig bearing trees on our property. The best I've ever seen or tasted !
    So happy you have this wonderful natural resource. I'm off to work so must keep this short, but love and hugs !!!

      Hi Matt. Unfortunately iam not a specialized as you so for me it reads: I’m a drinker. 😮😂🤣😂. We have spent a fortune on gin to make the preserves. 😳🤪. Cheers to that. I made yet another version of fig jam today. It amounted to 18 pounds….. 🎉🍾🎉. FROG jam. Fig, red berries, oranges and ginger. It is very tasty.having the figs right from the tree is just so much better in taste. Funny how we travel back in time with just a fruit.

    For all the hard work with the fruit, it is so worth it when you open a jar and know you made it from your land. I wish i had fruit on my land. I have 1 apple tree that barely produces. I do have veggies though and can tomato sauce and chutneys and salsas, dill pickles, mixed veggies, spicy mixed, pickled green beans.. sweet pickles, canned bruschetta topping. When my neighbor gives me her apple harvest i make apple sauce and canned apple pie filling.

    I also like my chutney to be thick. Even commercial, overly sweet chutney is delicious! Yours must be amazing! You are doing things the right way. The old English saying: 'Slow but sure wins the race' is perfect to describe what you are doing. There is no point putting the icing on until the cake is totally cold! Which is what Stephanie did, she waited for her cake to go cold and now she can focus on the icing! In her pre-channel days, she got the basics taken care of and people forget that.       Hey there Daniel. It is a.aging with cheeses and even on pizza 😳. In the past, we wanted things done and had to do a few renovations twice. Ouch. That is stupid, especially since we don’t have trust funds 🤣😂🤣. And we have the dogs who want attention.     To help pick the sloes you need to buy a berry picker. It is shaped like a scoop with metal teeth attached. It will save your fingers!

    I have sloes in the freezer 6 years old still good for gin! They keep for ages and better with age🥂🥂

      My parents went to Normandy and had a great time enjoying long walks along the beaches. I was so busy with the dogs and projects that I slept within minutes of going to bed. Stuart is back and all went well. Love your comment. Hugs from Colombe 💖💗💖

      Why would ppl be critical? It's not right to criticize anyone. PATRICK AND STEWART HAVE PLANS AND AGENDA ON THE PRIORITIES OF ORDERING SOME CONSTRUCTION ITEMS THAT R NECESSARY, PPL DONT REALIZE ITEMS TAKE TIME TO COME OR FETCH FROM SUPPLIERS!!

    Lovely content! I can imagine the goodies served to future BnB guests and sold in your future farm shop. While you cannot renovate, you can still garden, revamp/prune, sort through out buildings, make plans, research styles ... so many things to do! You’ll never run out of chores and content.

      Thank you so much my friend. There will be yummy jams for future gusts and chutney for our dinner parties. I have done a mini amount of gardening while Stuart was in the USA. Loved it. There is plenty of work we can do during winter. But we can garden till December and start again in March……. How about that. In Woodstock it was no gardening from November to May…….😢😂 🥰. We will have fun inside I promise. 💖💗💖

    Yummy.I love homemade jams znd chutneys.
    Patrick if you get an air dryer it's wonderful for drying the figs it could be eaten in muesli or as snacks and nibbles

The client is always right and in this case it is you two:) Town officials, in France this seems to be the Mayor, structural engineers, your insurance company concerns are your advisors. Especially as the public will be in your cottage from
      time to time. I should add Fire Marshals :) Enjoy your projects!

    I loved seeing all the things you made with the fruit. I also used to can every year with my Mom. We had peaches . cherries., apples plums & more. Good times .. I just wanted to say your sweet & sour figs looked liked they were not cut open.. Need to open them & check for worms... there can be no sign of them from the outside & sometimes they are hard to see when you open them... Bon Appetit.

    Folks need to remember that chateaux were built well before modern utilities were available and retrofitting the building properly for the amenities we expect today is a time consuming, tedious and expensive task that often requires the removal of older shoddy work not up to modern standards. Not fun stuff to film. But we still enjoy watching the the other activities like your cooking demos and of course those fun shopping trips. 😊

    Brown Sugar remedy - 1 tablespoon of molasses added to 1 cup sugar in food processor. For darker, add more molasses. I haven't bought brown sugar in a couple years because homemade can't be touched! Loved seeing the bounty and envy your elderberries. My starter twigs we bought have barely grown in the last 2 years but we had a TON of Mulberries so I may try making a small batch of wine with it. Canning is my next skill to acquire. 😁

      I wish we could buy molasses in a store. None. We have to order it online. Thank you for the recipe. If you can make your own brown sugar you can make preserves. Trust me you are going to love it. Maybe you can try mulberry jam? We seem to be in elderberry heaven. Everywhere I lived, except South Africa, they grow like weeds. I keep my fingers crossed.       @@patrickjourneytothechateau9452 Molasses seems to never go bad and what you have over there is likely superior to what we have available in the states so it would be worth it to have it. I think we have have really compacted soil and things have a really hard time getting established. We may have to do some major soil amending to get Elderberry and our blueberries to do much. 😖 Ah well, all in good time!     I think you have been doing a great job and accomplished a lot in a short time! Remember to take it a bit slower as well! Most of us just want to pack our things and go stay in the mountains somewhere just to have a little peace and live a slower pace in life.😜.
    While you were cooking the jelly and chutney I just got so much respect for our ancestors taking time to take on such a huge task. I think my back and feet will kill me by the end of such a busy day in the kitchen! 😬. You did well and it looks so tasty!!

      Dear Helena. Thank you very much. We try to renovate smart, not twice 😂🤪. Taking it slow is not really us. 😂🤣🤣😂. But you are right of course. Just living in France forces us to slow down. We love it.
      We had the exact conversation about how much our ancestors did. They were self reliant. It is amazing. I’ll pick figs soon and wash, clean and cut them and tomorrow is another day for our third variety of fig jam. It is so exciting.
      My grannies sewing machine stopped cooperating. So I have 6 long panels and couldn’t finish them before Stuart came back. 😡🤯😳. We ordered a new machine and will spend a few days renovating our bedroom. Including the bed crown. There are no instructions online for the round crown we have. As a sentimental person it is always a shame if something owned by a loved one brakes. Sounds she could do anything and was a very capable woman! Respect for the old folks!

      Hi there. How are you doing? Yes we have a companion fabric for the bed crown curtain. Bedding will have to wait 🤣. We are planning on using our flannel bedding from the US. So nice and warm. To find bedding here is a nightmare. There are no sheet sets…..😮😮😮. I love pueblo style. So pretty.
      Ohhhh. Our puppies. Like Bella, our like to eat things when young… 😳. Oh well. I hope you find the perfect covers for those pillows.

    Oh my goodness, I just really enjoyed the whole video. I was mesmerized by the cooking. I have never done anything like that in the kitchen. It’s like watching a lost art form I just loved it. One of the most popular pizzas I our town is fig and leek it’s delicious. They use a fig jam, do you ever make fig jam?

    PS. My fig harvest is in September. I must say- by the end I was glutted of figs. But !!! I brought out the preserves for pork. It was delicious baked on pork tenderloin with dijon mustard.

      I can completely relate to you 😳😂🤯. Still so many on the tree. And we harvested already about 140 ponds……. And there are at least another 100 pounds up there. One more preserve Sunday. Elderberry is amazing. I agree. We used the chutney on Pizza.….. it was delicious. Figs are great with goat cheese and we are in goat cheese central here. 🥰😘🥰. Huge hugs from us. ❤

    You guys are doing allsorts but sometimes the basic things take time and especially in France ! Lol. Better to be safe and organised . You have the winter ahead of you so indoor jobs will be a premium until the spring comes .

      I agree. better organised and safe in the basics. There is a winter coming when we can sew, paint and remodel bathrooms. Well, maybe 2. Our own bathroom is fine. Old and used up but perfectly useable. 🤩
      The chutneys are delicious. Both very different in taste. We now also have 3 different fig jam varieties......... Dogs are great. All asleep around me in the kitchen. Hugs to you. 🥰🥰🥰

    We just got mostly done preserving our Quitten (Quinces I guess? I don't actually know what they're called in english, but google tells me this haha) and wow you really always forget how hard they are to cut ugh. But it's all worth it in the end (We must keep telling ourselves this, because nobody even wants them for free in their raw state anymore, since they can be such an ordeal to work with lol and I can kind of understand them).
    Your harvest and all the good things you turned it into looks amazing! Well done :)

    I love your stove-to have burners in the back- would love because I have my whole stove like the burners on your front part of your stove and I can't cook with pans that aren't flat bottomed, so I can't use the blue hot water canners here in America. But I use to can stuff, when I had a gas stove, I also was raised with my Grandma and Mom that canned everything and yes, we all helped. I miss the wonderful smells coming from chili sauce and mustard pickles.

    LOL I have run into crazy ladies like that while thrift shopping. 🤣 At a church sale a lady actually stole an item off of my husband he paid for when he put it down briefly to pick up another item. At least she didn't want to punch him. 🤣
    OMG you had an incredible harvest and what a wonderful stash for the pantry. I wouldn't even know how to make all that food. What a blessing to have the skills to create a feast to share.

    I only made 57 lbs of preserves this year and believe me getting, collecting, preparing, cooking and sterilizing and labeling is time consuming work. With all you have done in the kitchen I’m amazed that you have the gite renovated and rented, the roof that your friend fixed you have made the chateau fairly livable and you have taken care of those awesome dogs. We have seen John working on the electricity. Anyone who has done anything in a house knows electricity is key. Without it you have nothing working from phones to computers to stoves an so much more. Just show your brocante visits and cooking and I’ll be happy. 😊

    I loved all the goodies! It is a lot of work, but so rewarding! The tart looked scrumptious! I have never had chutney and am intrigued. Is it possible to dry figs at home?? I don't know. You are wise to start with the essentials (electricity and plumbing, etc.) before starting on the fun stuff!!

      Hello dear Larry. It is a lot of fun and work. I do enjoy it tremendously. The tart was indeed yummy. I was introduced to chutneys at an Indian restaurant in London when I was 12 years old. Loved it ever since.
      Yes, I believe on can dry them. But they are very juicy so there is a higher chance of mold. 😮
      Since there is a severe shortage of artisans, we are limited in some areas anyway. And as you mentioned, let’s get the essentials in place first. Hugs my friend. 😘🥰😘

    I renovated a 1924 home, under 2,000 square feet. Re-wiring the knob & tube took a crew of 4 to 6 electricians two months plus the patching & painting. That is an important foundation & safety measure. I would suggest (if any way possible) that you treat plumbing the same way. Best wishes!

      Hi Colleen. Wow that is a lot of work. We are lucky that one wing of the chateau was re-wiered a few years back and it was a good electrician. 🎉. You did a fantastic job.
